It has been a hot summer, and I have been enjoying a variety of different cool and refreshing drinks like this watermelon lime refresher!
This drink recipe is so simple, it has only three ingredients. I find this refresher perfectly balanced between the tart lime juice and the sweet watermelon. My watermelon was a very sweet one, so I felt no need to add any sugar at all.
The final ingredient is club soda or sparkling water. I love how just a little bit of bubbly makes it feel special, like more than just drinking juice!
I kept the serving size small in the recipe because the club soda or sparkling water will lose its bubbly-ness after being mixed. You can prep more watermelon and lime juice in advance to keep this refreshing drink on hand!
Variations to this Watermelon Lime Refresher recipe:
- If you want to make a whole pitcher for a party, increase the recipe 4x. This will use about ½ a medium (circular) watermelon.
- Turn it into a slushy by freezing the watermelon first, and skip straining the liquid.
- If your watermelon is not sweet, you can mix in liquid sweetener such as simple syrup, honey, or agave nectar to taste.
- Turn it into an electrolyte drink by substituting coconut water for the club soda and adding a small pinch of salt. Coconut water is a great source of potassium!
- Make it an adult drink by mixing in 1.5 oz of vodka per serving.
- 2 cups seedless watermelon, cubed
- 1 lime, juiced, about 2 TBS
- 8 oz can club soda or sparkling water
- Ice cubes, for serving
- Blend watermelon and lime juice in a food processer or blender until smooth. Strain through a fine sieve and discard solids. You should have just less than 1 cup of juice.
- Pour over ice with chilled club soda or sparkling water. Makes about 16 oz.
