Small Batch Veggie Lasagna

Back when I posted my Lentil Loaf recipe I told you all that meatloaf was a favorite food of mine as a child.  Well, my other favorite food was lasagna.  Mom would always ask us what meal we wanted to have for our birthdays, and I always chose lasagna.  Now I make a veggie version, and I love this small batch veggie lasagna because it only makes 4 servings.  With only two of us in the house, we don’t have to eat lasagna until we are tired of it! One Pot Spanish Wheat Berries with Chickpeas and Olives

Wheat berries are my favorite grain to cook with.  They are inexpensive, and the texture is outstanding!  I feel like they get overlooked so often because gluten free grains are popular right now.  Also, fancier wheat grains are often used by recipe developers, so they get all the hype.  I have tried both farro and kamut (ancient wheat grain varieties), and I don’t think they are worth the extra money when compared to standard wheat berries.  This one pot Spanish wheat berries with chickpeas and olives is a take on arroz con pollo, made vegetarian of course! Wild rice and vegetable SoupI love to make soup out of whatever I might happen to already have on hand.  If you have a good broth and a few veggies, you can certainly come up with a dinner worthy meal.  In this soup, I used the last of my wild rice.  Wild rice is a wonderful grain; it’s chewy and adds great color.  In this wild rice and vegetable soup I used what I had on hand for vegetables including onion, celery, carrot, and spinach.   Continue reading

Vegetarian Lentil Loaf with Tomato GlazeMeatloaf was my favorite meal as a kid, especially mom’s recipe.  I would even help out in the kitchen to get some of mom’s meatloaf!  When I turned to a mostly vegetarian diet, I didn’t expect any kind of loaf in my future.  Meat imitations often times fail.  They simply don’t, and won’t, taste like the real thing.  I was hesitant to try a loaf recipe, however, my love for lentils has grown exponentially in the last few years.  I decided to give a lentil loaf a try and we found another keeper for the rotation!  My vegetarian lentil loaf with tomato glaze tastes nothing like meat (and shouldn’t), but is delicious on it’s own accord. Zucchini Corn and Bean EnchiladasHappy New Year everyone!  This is my first post of the new year, and I’m so excited to share my plans for the year.  As I shared in my best of 2016 post, I recently made a move into a house where I have lots of space.  Now that I have space, I’m very excited to be able to establish a large garden.   Last year I joined a CSA because I knew I wouldn’t get a garden planted in time.  I did get to grow a few plants, but this year I want to see the garden expand with lots of vegetables, including some spring and fall crops.  One of my favorite veggies to grow is zucchini, which is the inspiration for today’s recipe.  Zucchini corn and bean enchiladas are simple and easy, especially if you have zucchini growing in your garden. Mediterranean Pasta Plate with Sun Dried Tomato Sauce

meditteranean-pasta-plateEvery year when summer rolls around, I can’t wait for the fresh produce to start filling my plate.  However when fall gets here, I seem to have a hard time giving up summer.  I love fall vegetables, like butternut squash, but I’m just not over summer yet… Even though it’s almost the end of September.  This Mediterranean Pasta Plate with Sun Dried Tomato Sauce is fresh and fast!  It’s a great way to use the tomatoes and cucumber that I’m still getting in my CSA!
