Radish and Corn Wheat Berry Salad by Alison's AllspiceFor me, radish is one of those mysterious vegetable that I don’t use often.  I feel like I don’t know how to use it, so I avoid it.  Well, simply put, fresh radish is easy and great in salads.  I created this radish and corn wheat berry salad as a challenge to myself to turn radish from mysterious to delicious!

Norwegian Cod Grain Bowl with Lingonberry by Alison's AllspiceI was introduced to lingonberry when I married into a Norwegian family.  It is a tangy fruit, much like cranberries or currents.  I made this Norwegian cod grain bowl with lingonberry and dill to explore some classic Norwegian flavor combinations.

I made this recipe with cod, because it is a traditional Norwegian fish.  However, I recommend shopping for pacific cod, because Atlantic cod is not a sustainable choice, as their populations have been over fished.

One Pot Spanish Wheat Berries with Chickpeas and Olives

Wheat berries are my favorite grain to cook with.  They are inexpensive, and the texture is outstanding!  I feel like they get overlooked so often because gluten free grains are popular right now.  Also, fancier wheat grains are often used by recipe developers, so they get all the hype.  I have tried both farro and kamut (ancient wheat grain varieties), and I don’t think they are worth the extra money when compared to standard wheat berries.  This one pot Spanish wheat berries with chickpeas and olives is a take on arroz con pollo, made vegetarian of course! Roasted root vegetables are a wonderful staple of the season.  Enjoy as many root vegetables as you can now, because soon spring and summer produce will be back.  I added one vegetable to this mix that is not a root vegetable: Brussels sprouts!  It is also a seasonal veggie, that grows best in colder temperatures, and I couldn’t make this dish without something green!
