Vegan Kimchi Fried Rice with Edamame by Alison's AllspiceI started experimenting with kimchi as an ingredient long ago.  So far, my favorite way to eat it is in fried rice.  This vegan kimchi fried rice with edamame is a colorful dish that is super easy to make!

Vegan Okra Etouffee

Vegan Okra Etouffee by Alison's AllspiceEtoufee is one of my favorite comfort food dishes.  It occurred to me not long ago, that the only ingredient keeping my favorite etouffee from being vegan was the seafood.  Therefore, I decided to try vegan okra etouffee as a plant based version!

I chose to use okra to replace the seafood because it is traditional in Cajun cuisine.  I have seen variations that use chickpeas, but they don’t match the flavor and texture of the original dish, in my opinion. Continue reading

Grilled Eggplant and Herb Wrap by Alison's AllspiceHas everyone had a great summer full of grilling? I grill out every Sunday night.  This week, I made a grilled eggplant and herb wrap that is loaded with fresh flavor!

Are you a fan of eggplant?  It can be bitter, and salting the eggplant helps to remove those bitter flavors.  Also, the fresher the eggplant, the less bitter.

Some people are sensitive to eggplants bitterness, and others not.  Therefore, this may be a step you can skip if you don’t notice the bitter flavor of eggplant. Continue reading

Korean BBQ Tempeh Wraps by Alison's AllspiceHave you tried Korean BBQ, or gochujang sauce yet? In these Korean BBQ tempeh wraps, the spicy gochujang is balanced by cool cucumber and creamy mayo.

Gochujang sauce is spicy, which is one reason I love it.  If you (or a member of your family) don’t like spicy, try using regular BBQ sauce in the skillet and personalize each wrap with spicy Korean or sweet American BBQ sauce. Continue reading
