My parents taught me how to make a grilled cheese sandwich at a very young age.  They encouraged me to cook as a kid, and maybe that’s why I enjoy it so much today – it takes me back to my youth.  Back then, my grilled cheese sandwiches were simply made with cheddar, but this Gouda grilled cheese with apricot ginger spread is a delicious adult take on the simple and convenient grilled cheese sandwich. This week I have been having a lot of fun playing around with cracker toppings.  Bite size food has to be able to impress in that single bite, so you know the flavors have to be good.  Therefore, sampling all those flavors, such as my Banh Mi Crackers, has been a lot of fun, and delicious.  The Breton Crackers that I received samples of have been great.  I received the original flavor, which is quite tasty, and really  enjoy their light and crisp texture.  The size of the cracker is large enough to top with lots of veggies and smear with sauces, such as my Tzatziki Cucumber Dill Crackers. As a kid my family used to have snack nights.  In lieu of dinner, we would have a tray full of finger foods, usually loaded with crackers, cheese, and dips, as well as fruit and veggies.  When Breton Crackers sent me samples of their original crackers with tender-crisp texture and delicious flavor, I knew they would be perfect for snack night. I wanted my crackers to be loaded with veggies, so I chose a theme that uses lots of veggies, the banh mi sandwich.  These banh mi veggie cracker bites are fun little bites that you’ll keep reaching for on your snack night! Classic Barbecue Jackfruit Sandwiches by Alison's AllspiceI hope you guys didn’t get your fill of BBQ over memorial day weekend because today we are having vegan barbecue!  If you have been eating meatless for very long, you certainly have come across jackfruit.  If not, let me explain.  Jackfruit is a large fruit native to Asia that when young and under ripe has a stringy, chewy texture that is considered very close to the texture of meat.  It is used commonly as a meat replacement to make vegetarian dishes.  One of the most commonly made jackfruit dishes is barbecue sandwiches because it mimics pulled pork very well.  Today I am sharing my recipe for Classic Barbecue Jackfruit Sandwiches!   Continue reading
