Vegetarian Slow Cooker Three Bean Chili

Vegetarian Slow Cooker Three Bean Chili by Alison's AllspiceChili is one of those recipes that you can make in a million (and a half) different ways.  I love my chili recipe, and needed to update the recipe for my readers.  This vegetarian slow cooker three bean chili is a classic recipe you’ll use again and again.

In this recipe, I use classic kidney beans, black beans, and refried beans.  The refried beans act as a thickener and add a creamy texture that binds all other flavors. Continue reading

Roasted Butternut Squash Chowder

Roasted Butternut Squash Chowder by Alison's AllspiceCalling out to all butternut squash fans, this soup is for you!  My roasted butternut squash chowder has intense butternut squash flavor in a creamy, luxurious comfort food!

I roasted the squash and stirred it into the chowder at the last minute to help it to hold its unique flavor profile in this chowder.  In leftovers, the squash will become more mellow and start to take on the flavor of the chowder. Continue reading

Cajun Black Eyed Pea Sweet Potato Cakes

Cajun Black Eyed Pea Sweet Potato Cakes by Alison's AllspiceSo, black eyed peas have not always been my favorite food.  However, they are said to bring good luck to those who eat them on New Years Day!  I love to partake in fun traditions, therefore I decided to experiment with black eyed peas to find a delicious way to eat them.

The tradition comes from the southern United States, so I figured Cajun flavors would work well.  I love these Cajun black eyed pea sweet potato cakes, and plan to enjoy them for good luck in the new year! Continue reading

Chinese Mustard Baked Tofu Sandwiches

Chinese Mustard Baked Tofu Sandwiches by Alison's AllspiceIt’s redux time again!  This month’s theme was: Grab your nearest cookbook and ReDux the recipe on page 201, 17, 217 – or any combination of the number ‘2017.’   I chose to redux Chinese Mustard Baked Tofu Sandwiches from the Moosewood cookbook.

I don’t have a large collection of cookbooks, but I do love the moosewood cookbook. The recipe I chose was from page 120 for a grilled Chinese mustard sandwich with sauted peppers and onions.  Continue reading

Sweet Potato Black Bean Cilantro Salad

Sweet Potato Black Bean Cilantro Salad by Alison's AllspiceOne ingredient I always keep in my fridge for easy nutritious meals is sweet potato.  I like to dice them into small pieces and either roast in the oven, or fry in a skillet.  They can stand alone as a side, or be tossed into salads, soups, stews and bowls.  This sweet potato black bean cilantro salad is my favorite way to use sweet potatoes. Black beans add plenty of protein to help you stay full, and cilantro adds plenty of fresh, bright flavor!  Eat a large serving as a main dish, or a small serving as a side. Continue reading

Buffalo Cauliflower Blue Cheese Pizza

Buffalo Cauliflower Blue Cheese Pizza by Alison's AllspiceI spend a fair amount of time over on pinterest looking at recipe ideas and getting inspired by other bloggers.  Buffalo pizza’s caught my eye there because I love all things buffalo.  Reviewing recipes, I noticed that the sauce you can use on a buffalo pizza varies quite greatly.  Some people use the buffalo sauce as a base, but that means every bite is is loaded with spice and their is no relief from the heat.  Some recipes use bottled ranch dressing, but I didn’t like the sound of that either.  I developed my buffalo cauliflower blue cheese pizza with a homemade blue cheese pizza sauce! Five Minute Four Ingredient Homemade Gravy

Five Minute Four Ingredient Homemade Gravy by Alison's AllspiceFriends, I hope you didn’t over do it on the mashed potatoes and gravy over thanksgiving because I have a fantastic recipe for you.  This five minute four ingredient homemade gravy is so savory, and can be adapted for many diets.  It is made with broth or stock and can be made vegan, vegetarian, or omnivore!  Whatever broth you use will be the type of gravy you will have.  My mom always made gravy from drippings off a cut of meat, but there is not need for that with this recipe.  You can still enjoy a homemade gravy without needing to roast a whole bird, which makes it great for serving to a small crowd, or serving vegetarian gravy that everyone will enjoy!
