Avocado Tostadas

Tacos are considered a kings food in my house.  Tostadas are flat tacos, right?  Well, not really.  Tostada means “toasted.”  It’s kind-of hard to toast a taco because all the ingredients are wrapped up inside it’s crunchy shell (or soft shell depending on your preference).  Tostadas and tacos have very similar (if not the same) ingredients, therefore, we are making room for toasty tostadas at the king’s table!  Especially these avocado tostadas!

Bean and Potato Enchiladas

I love to make enchiladas because they are simple.  Simple ingredients and simple to prep.  All you have to do is make your filling, stuff tortillas, and bake!   Anyone can do that.  This recipe is made almost entirely out of my pantry staples.  It’s easy to add to the end of my weeks meal planning because I generally don’t need many ingredients.

Vegan Chilaquiles

I am so excited to share this recipe.  Chilaquiles (Chee-la-key-les) is a traditional Mexican dish that is made to use up stale tortillas or tortilla chips.  I dislike food waste, therefore I love recipes like this one.  Recipes that lend ideas to use up ingredients that you have leftover in your fridge.  This recipe is so quick, I almost didn’t get any photos while I was cooking.  A great recipe for a busy weeknight!

Baked Tortilla Chips

Every time I buy a large package of corn tortillas we never seem to get them used up before they start to go stale.  Food waste is unacceptable in my house, so I have been searching for a way to use up leftover tortillas after we are out of taco fixings. These chips are the perfect answer.

Farmers Market Quesadilla

I needed a quick, single serving, lunch today and this quesadilla hit the mark!  I went to the farmers market this morning knowing that I had one tortilla left over in the fridge.  I circled like a vulture checking out all the fresh produce trying to decide what I should fill the tortilla with.
