Vegetarian Paella with Smoked Tofu

I first came across paella in a cooking magazine.  It was a seafood paella and used whole lobsters and shrimp.  I didn’t know what the dish was at the time, but I could tell it was very extravagant indeed.  I was a poor college student and would never be able to afford such a luxury.  However, the dish intrigued me and stayed in the back of my mind for some time.

Simple Bean Enchiladas

Enchiladas are one of my favorite week night dinners.  All you have to do is stuff a tortilla, smother in sauce and cheese, and bake.  Easy.  You can stuff an enchilada with almost anything it seems.  However, the more ingredients you use, the more prep work you have.  And you need a filling that will hold together instead of tumbling out of the enchilada with every chance.

Greek Wheat Berry Salad

Greek is one of my favorite salad types.  Greek salads always include bold flavors and lots of color!  This salad is perfect for the summertime using fresh and widely available produce, like cucumbers and tomatoes.  I like to make a big batch to take to work all week long.  Everyone is jealous at lunch time when I open up my mug!

Chicago-Style Deep Dish Pizza

Pizza is an absolute favorite around here, and this pizza explodes with flavor!  We eat this pizza as a once-in-a-while treat because it is definitely a splurge.  A must try if you are a pizza fan, however.  A Chicago-style pizza has the cheese on the bottom and the sauce on the top because it has a long baking time and the sauce on the top prevents the cheese from burning. This layering method works wonders for the flavor as well.   The diced tomato sauce roasts on the top of the pizza, melting the cheese into a gooey center, all held together with a thick crust.  I’m getting hungry just writing about it!

Taco Pizza

Taco pizza is a total comfort food for me.  I grew up in a small town where the only fast food was the local gas station that made pizza.  We didn’t have take out pizza often, but it was always a treat.  Taco pizza was always my favorite, so I created a taco pizza that is vegetarian to remind me of the old comfort food I grew up on.
