Easy Pan Fried Crispy Tofu

Easy Pan Fried Crispy Tofu by Alison's AllspiceTofu can be a pretty intimidating ingredient if you have no experience using it.  This recipe, easy pan fried crispy tofu, is really more about learning a method to cook tofu than it is developing a recipe.

One of my goals with this blog is to help people learn how to cook more meatless meals.  If you are experimenting with meatless eating, or a new vegetarian trying to learn some tricks of the trade, I have so much to share with you about cooking tofu! Continue reading

Peanut Butter Tofu Banh Mi Bowls

Peanut Butter Tofu Banh Mi Bowls by Alison's AllspiceThis weekend,  I challenged myself to build a meal based on what I already had at home.  These peanut butter tofu banh mi bowls helped me to use up left over veggies, and I discovered a new combo that I love – peanut butter and tofu!

I love to do my grocery shopping, which might be weird, but what kind of women doesn’t like to shop?!  Personally, I don’t like to shop for clothes or shoes, I like to shop for food.  I guess I’m a foodie.  Maybe. Continue reading

Chinese Mustard Baked Tofu Sandwiches

Chinese Mustard Baked Tofu Sandwiches by Alison's AllspiceIt’s redux time again!  This month’s theme was: Grab your nearest cookbook and ReDux the recipe on page 201, 17, 217 – or any combination of the number ‘2017.’   I chose to redux Chinese Mustard Baked Tofu Sandwiches from the Moosewood cookbook.

I don’t have a large collection of cookbooks, but I do love the moosewood cookbook. The recipe I chose was from page 120 for a grilled Chinese mustard sandwich with sauted peppers and onions.  Continue reading

Homemade Teriyaki Baked Tofu

Homemade Teriyaki Baked Tofu by Alison's AllspiceHave you ever bought baked tofu at the store?  It’s a handy product that is seasoned, cooked, and ready to throw into any dish.  When I was first transitioning from being an omnivore to vegetarian, I found that I loved tofu!  This is not the case for most people, they find the texture off-putting, so yes, I know I’m weird.  I started experimenting with all kinds of ways to enjoy tofu (including this smoked tofu recipe).  This homemade teriyaki baked tofu makes weeknight dinners even faster! Blue Cheese Wedge Salad with Veggie Bacon

Blue Cheese Wedge Salad with Smoked Tofu Bacon by Alison's AllspiceI love to eat salads at restaurants.  They are always so much more indulgent than the salads I tend to make at home.  After trying blue cheese wedge salad at many restaurants,  I couldn’t resist remaking the recipe at home.

This salad recipe is made with iceburg lettuce.  This is the only time I use iceburg in my kitchen.  Other lettuces don’t hold up to my standards for a wedge.

The crispness and texture are perfect, and I can indulge in my blue cheese obsession.  The only true down side to iceburg lettuce is that it is not nutritious like other leafy greens. Continue reading

Bok Choy and Mushroom Soup

The farmer’s market here is finally over.  Finally seams inappropriate because I will miss it so greatly until April rolls around.  Saturday mornings in the spring are like Christmas for me.  What surprises will there be? What will I not be able to go home without after its first appearance at the market? For this soup, I let the lingering fall produce make my selections.  Bok choy was only $1.00!  I coudn’t leave it behind, and hence this soup was born.

Smoked Tofu

This recipe has been ready for the blog for a long time, and it is finally here!  Tofu is not much by itself, it’s known for absorbing flavors well.  Smoking it adds immense flavors that go well into many types of dishes and turn boring old tofu into something special.  Buying smoked tofu from the store is expensive.  However, smoking it at home is really easy to do!

Vegan Chilaquiles

I am so excited to share this recipe.  Chilaquiles (Chee-la-key-les) is a traditional Mexican dish that is made to use up stale tortillas or tortilla chips.  I dislike food waste, therefore I love recipes like this one.  Recipes that lend ideas to use up ingredients that you have leftover in your fridge.  This recipe is so quick, I almost didn’t get any photos while I was cooking.  A great recipe for a busy weeknight!
