Thai Sweet Potato Soup by Alison's AllspiceI had a huge sweet potato crop in the garden this fall and I have been loving cooking with sweet potatoes all winter long. Soup season is just about over for me, so you should try this Thai sweet potato soup before spring weather sweeps us off our feet!

I almost always pair sweet potato with a spicy flavor.  Sweet and spicy are a perfect match and there are lots of ways to do it with sweet potatoes.  Usually I go with chipotle to add heat, but the red curry paste in this soup did a wonderful job as well. Continue reading

Today I have a great fall recipe for you to try, purple sweet potato and kale mini crustless quiches, and there will be many more recipes coming once winter break has started!

Quiches are supposed to be more custard-like than a fritatta or egg bake because they have more dairy in them.  I love adding cottage cheese for a portion of my dairy because it adds a boost of protein.  The little chunks also create air pockets when baking, so this recipe will yield a light and fluffy quiche.  Continue reading

Vegetable Barley Soup

Vegetable Barley Soup by Alison's AllspiceI am a huge fan of vegetable soups, especially when the weather turns cold.  This winter, I wanted to switch things up from my classic vegetable soup, so I made a vegetable barley soup instead!

Basically, I took my classic vegetable soup recipe and merged it with my mushroom barley stew recipe (old, old recipe!).  I omitted the corn from the veggie soup and let barley more than take its place. Continue reading

Sweet Potato Kale Quinoa Bowl

Sweet Potato Kale Quinoa Bowl by Alison's Allspice Bowl meals come by many names,  Buddah bowls, power bowls, nourish bowls, grain bowls, etc., and are just about the easiest thing to make.  You just toss everything into a bowl!  The ratio of ingredients is what  I like best about bowl meals, including this sweet potato kale quinoa bowl.

This bowl is not a kale salad, and it is not a quinoa salad either. It is truely a bowl meal that is balanced with grains and proteins, fresh vegetables and cooked vegetables, as well as crunchy and soft textures. Continue reading

Chipotle Sweet Potato Hominy Soup by Alison's AllspiceHave you ever tried hominy?  I have to admit that testing this recipe was my first time cooking with hominy.  It has a pleasant nutty flavor and soft, fluffy texture.  Try it in this chipotle sweet potato hominy soup to see what I mean!

I loaded this soup up with lots of vegetables to make it hearty and filling, but still light.  Sweet potato is the star of this dish, right behind the hominy, and so I added chipotle for a sweet and spicy kick. Continue reading

Sweet Potato Coconut Curry

Sweet Potato Coconut Curry by Alison's AllspiceA few months ago, I posted this recipe for butternut squash chickpea curry.  One week when I was cleaning out the fridge, I used the recipe but made alterations based on what I had.  My family loved this sweet potato coconut curry even more than we loved the butternut squash version, so I just had to share it with you all!

So, what alterations did I make?  Two major swaps and one omission is all that you will find.  I swaped sweet potato for the butternut, and tofu for the chickpeas. Continue reading
