My homemade blackening seasoning is a favorite to use on fish, and its spicy nature is delicious in these blackened fish tacos with pineapple slaw.
The pineapple slaw is sweet and juicy keeping the spicy blackened fish from overwhelming your tastebuds. The two are a perfect match. Continue reading →
When I get out my charcoal grill, I don’t like to go back and forth between the house and the grill. Instead, I just cook everything on the grill. In this grilled shrimp tostadas recipe, you will grill both the shrimp and the corn tortillas to make the crispy tostada shell.
I find grilling shrimp on a stick much easier than one-by-one, and kabob sticks take up much less space than a grilling basket when it comes to storage. Continue reading →
I started making this easy southwest chopped salad for lunches last summer and it is still a favorite. Although this salad requires a little chopping, I still consider it easy because I almost always have all the ingredients on hand.
Having a well stocked pantry makes it easy to whip up a good lunch without much pre-thought. I use canned black beans, frozen corn, jarred jalapenos, bagged tortilla chips, hot sauce and bottled ranch. I always have cabbage and onions in the fridge. Therefore the greens are ususally the only thing I need to put on the grocery list! Continue reading →
I can’t believe how fast the summer has gone, school starts in only a few weeks! I had to share these smoked tofu summer rolls before summer is over. They are a fresh, light meal that can be easily made without heating up your kitchen!
I like to use the smoked tofu in my summer rolls because it is already cooked. You could probably use “raw” tofu straight out of the package, but the smoked tofu has better texture and it adds more flavor. Continue reading →
The first time I came across this idea to turn Caesar salad into a pasta salad, it was in a cooking magazine. After a quick google search, it appears that I am behind in the game because kale caesar pasta salad is definitely a thing already.
I tried to make mine a little bit different by adding more garlic, and skipping the croutons, using only pasta in my pasta salad. Also, I added red cabbage for a splash of color. Continue reading →

I first started roasting cabbage a long time ago and for some reason I got away from it. This spring, I have been trying many variations of this recipe and this roasted red cabbage with garlic vinaigrette is by far my favorite.
This recipe can be made with red cabbage, green cabbage, or both. The red cabbage has better flavor, in my opinion, and its dark color helps to keep the cabbage from looking burnt when it is nicely caramilzed and crispy. Continue reading →
This coconut turmeric noodle bowl with tofu and veggies was inspired by golden milk, a creamy drink or tea made with a base of plant-based milk and turmeric. I used the golden milk in place of broth to make a creamy noodle bowl that can be eaten hot or cold.
This isn’t a soup recipe because the ingredients are prepared individually, not together in one pot. It resembles a buddah bowl more than it does soup. Continue reading →

When I was digging through the fridge trying to come up with ideas for a quick meal, I thought of those thai crunch salads you see all over pinterest. Well, mine isn’t exactly thai, but it is a delicious crunchy asian chopped salad with peanut dressing! Continue reading →
