Avocado Tostadas

Tacos are considered a kings food in my house.  Tostadas are flat tacos, right?  Well, not really.  Tostada means “toasted.”  It’s kind-of hard to toast a taco because all the ingredients are wrapped up inside it’s crunchy shell (or soft shell depending on your preference).  Tostadas and tacos have very similar (if not the same) ingredients, therefore, we are making room for toasty tostadas at the king’s table!  Especially these avocado tostadas!

Buffalo Queso Dip

This dip is a riff on Buffalo Chicken Dip.  Buffalo is one of my favorite flavors that I miss.  This dip is an awesome way to enjoy it.  I am planning on making it to celebrate the last regular season football game coming up this Saturday, but it would work well at a new years eve celebration as well!

Chipotle Trout Sliders

Soooooo……..  This is the recipe I shared with my family for Thanksgiving!  Not very thanksgiving-y, but everyone loved it.  We were trout fishing together for a week, and made this chipotle trout sliders recipe with fresh trout!  Yum!  It was served along with garlicky green beans, which is a lot more like thanksgiving.

Bok Choy and Mushroom Soup

The farmer’s market here is finally over.  Finally seams inappropriate because I will miss it so greatly until April rolls around.  Saturday mornings in the spring are like Christmas for me.  What surprises will there be? What will I not be able to go home without after its first appearance at the market? For this soup, I let the lingering fall produce make my selections.  Bok choy was only $1.00!  I coudn’t leave it behind, and hence this soup was born.

Easy Guacamole

This recipe is my favorite.  I mean it, I am so excited to share this recipe.  Guacamole is something that should be easy to make.  And this recipe is delicious as well.  I made this recipe by testing time and time again, until I came up with the perfect combination.  I stock all the ingredients, except the avocado, in my pantry so I can whip it up at any time!

Crispy Fish Sandwiches with Slaw

As far as fish sandwiches go, this one is pretty classic.  As I did my research for creating this recipe, I found that  traditional crispy fried fish with slaw is really the way to go.  It just works so well, don’t fix it if it’s not broken (I say that, but I will still try, sigh…life as a food blogger).   If you’re not a huge fish fan, or eat a lot of it like I do, this sandwich is a great way to consume more fish without feeling like you are… it’s just a sandwich!
