Spicy Blackened Fish Tacos with Lime Crema

Spicy Blackened Fish Tacos with Lime Crema by Alison's AllspiceWhen I was a kid, one of my parents favorite meals was blackened salmon.  I always remembered that meal because the first time we tried it as a family, we didn’t realize how spicy the seasoning was going to be!!  It was so flavorful, but I remember downing glasses of milk try to keep my mouth from catching fire.  In subsequent trials, my parents learned the right amount of seasonings to use, and used it sparingly for us kids.   Today blackening seasoning is still a favorite of mine, so I decided to try it in one of my favorite foods, fish tacos.  These spicy blackened fish tacos with lime crema were a hit at my house! Grilled Clam Stuffed Mushrooms with Tomato Relish

Grilled Clam Stuffed Mushrooms with Tomato Relish by Alison's AllspiceI have a gigantic collection of cooking magazines that I have collected over the years.  I’m pretty serious about my collection as well.  My magazines are filed away according to the month published.  When ever I need some recipe inspiration, or want to do some light reading I go find this months file.  I tab all my favorite ideas so they are easy to find, but sometimes I will reread the magazine and see how my tastes have changed since I first tabbed it.  Recently I did this and came across a stuffed mushroom recipe with a red pepper relish.  I couldn’t believe that I hadn’t tabbed that recipe! I instantly wrote up my own variation and dubbed it worthy of a grill out night.  And thus, grilled clam stuffed mushrooms with tomato relish was born.  Continue reading

Chipotle Baked Fish Tacos with Pico Slaw by Alison's AllspiceAs a pescatarian, I eat lots and lots of vegetarian meals, with a few fish or seafood meals thrown in for good measure.  I am weird and LOVE eating fish.  At home, we eat it about once a week.  This being said, can you believe that I haven’t posted a fish recipe since I posted Smoked Trout Fish Cakes in October???  Crazy, I know.  Well I’ve got a few more coming your way.  I have been working on fish tacos recently, and this chipotle baked fish tacos with pico slaw is definitely a fun ad healthy way to enjoy some fish! Spicy Cauliflower Swiss Chard Pesto Pasta

Spicy Cauliflower Swiss Chard Pesto Pasta by Alison's AllspiceLeafy greens are one of the hardest foods for me to consume regularly.  Spinach and kale are the easy ones.  I devour kale salads when I bother to make them, and I try to mix spinach into dishes like quesadillas or lasagna.  I mixed chard into enchiladas before, but I was inspired by Joanne@Eats Well with Others to try a pesto!  This spicy cauliflower Swiss chard pesto pasta recipe was amazing!  Seriously, I surprised myself with how much I loved it, and I found a new way to enjoy more leafy greens like chard. Tzatziki Cucumber Dill Crackers

Tzatziki Cucumber Dill Crackers by Alison's AllspiceDisclosure: I received free samples of Breton Crackers mentioned in this post. By posting this recipe I am entering a recipe contest sponsored by Breton Crackers and am eligible to win prizes associated with the contest. I was not compensated for my time.

This week I have been having a lot of fun playing around with cracker toppings.  Bite size food has to be able to impress in that single bite, so you know the flavors have to be good.  Therefore, sampling all those flavors, such as my Banh Mi Crackers, has been a lot of fun, and delicious.  The Breton Crackers that I received samples of have been great.  I received the original flavor, which is quite tasty, and really  enjoy their light and crisp texture.  The size of the cracker is large enough to top with lots of veggies and smear with sauces, such as my Tzatziki Cucumber Dill Crackers.
