The yogurt and fresh lemon juice add tang that you would expect from a traditional buttermilk ranch and the fresh herbs have a distinctly bright flavor that you will never get in a bottle.

I love to grill when it is hot so that I don’t heat up the house cooking.  These tofu mushroom and zucchini kabobs with creamy chimichurri sauce make a great light meal for the hot weather too.

I loved the brightness of red wine vinegar and fresh herbs that are used in chimichurri.  It is traditionally paired with grilled meats, but is quite delicious with grilled vegetables and tofu. Continue reading

Are you a fan of eggplant?  It can be bitter, and salting the eggplant helps to remove those bitter flavors.  Also, the fresher the eggplant, the less bitter.

Some people are sensitive to eggplants bitterness, and others not.  Therefore, this may be a step you can skip if you don’t notice the bitter flavor of eggplant. Continue reading

Lemon Caper Spaghetti with Chickpeas by Alison's AllspiceOn most Saturdays, I find myself at home alone for lunch.  I usually try to go through the fridge and use up leftover ingredients.  Sometimes I do something I might never have tried otherwise, and end up loving it!  That was the case for this lemon caper spaghetti with chickpeas recipe.

This meal used up leftovers from my shrimp pistachio gremolata pasta dish.  I wanted to make a vegan and nut free version, but the dish was lacking protein.  Hence, chickpeas.  I gave them a quick pan fry like I do in this gyro bowl recipe, and viola!  Lunch is served. Continue reading

I don’t stock anchovies as a pantry staple, therefore my garlic black olive tapenade is a vegan version of the classic!

I love garlic, and it pairs perfectly with the olives and capers in the tapenade.  Did you know that garlic ranks number two as a highly beneficial superfood (right behind turmeric)?  It has been linked to reducing/preventing heart disease, stroke, cancer, and infections (source). Continue reading
