Quick Cilantro Garlic Seared Shrimp by Alison's AllspiceYou know, I have really been on a cilantro kick recently!  I didn’t always like cilantro,  however.  I found it to be an incredibly over-powering flavor and never used it in my dishes.  It’s funny how tastes change, though.  I tried cilantro on this jalapeno tomato and cilantro pizza and couldn’t get enough.  I started trying it on other things, like cilantro lime black bean salad, and this weeks sweet potato salad.  Needless to say, I’m hooked!  This recipe, quick cilantro garlic seared shrimp is a weeknight favorite because shrimp cook in a flash! Fried Avocado Black Bean Tacos by Alison's AllspiceAvocado’s have been a little pricey here recently.  I have a serious love for avocados, so when I saw them on sale last week, I couldn’t resist!  I am usually good about not buying things I don’t have a plan for (because if I don’t have a plan, they don’t get used).  Therefore, I set out to make a plan for the avo’s I had brought home.  I had some leftover tortillas, so tacos were the obvious choice.  When I googled avocado tacos, I couldn’t believe that I had never heard of this deliciousness!  Fried avocado black bean tacos are my favorite new way to enjoy my beloved avocado! Fresh Squeezed Lime Orange Margaritas by Alison's AllspiceToday I am going to tell you to story of a tree.  Way back in my days of graduate school, some friends all went in on a shipment to get some house plants.  As a poor student, I picked something inexpensive that would provide me with food.  Over the last 7 years, her name has become Miss Lime Tree.  She is an indoor/outdoor tree that has produced 5 crops of limes so far.  This year is a record year with 26 limes!  What do you do with that many limes?  Fresh squeezed lime orange margaritas, of course! Spicy Blackened Fish Tacos with Lime Crema by Alison's AllspiceWhen I was a kid, one of my parents favorite meals was blackened salmon.  I always remembered that meal because the first time we tried it as a family, we didn’t realize how spicy the seasoning was going to be!!  It was so flavorful, but I remember downing glasses of milk try to keep my mouth from catching fire.  In subsequent trials, my parents learned the right amount of seasonings to use, and used it sparingly for us kids.   Today blackening seasoning is still a favorite of mine, so I decided to try it in one of my favorite foods, fish tacos.  These spicy blackened fish tacos with lime crema were a hit at my house! Rhubarb Lime Sparkling Cocktail by Alison's AllspiceThis month, the recipe reduxers were challenged to make cocktails/mocktails!  This recipe challenge was entirely new to me.  I have never designed a drink – not one, not even a smoothie!!  I knew I wanted to use fresh fruit to create a great summertime sipper, so I started by doing my research on how to include it in a drink.  There were 2 obvious options, infuse the fruit in a simple syrup or into the alcohol.  I decided to infuse a simple syrup because it was a shorter and simpler task.  I tried this recipe with both raspberries and rhubarb.  Rhubarb was the clear winner, and the rhubarb lime sparkling cocktail was born!
