Grilled Eggplant and Herb Wrap

Grilled Eggplant and Herb Wrap by Alison's AllspiceHas everyone had a great summer full of grilling? I grill out every Sunday night.  This week, I made a grilled eggplant and herb wrap that is loaded with fresh flavor!

Are you a fan of eggplant?  It can be bitter, and salting the eggplant helps to remove those bitter flavors.  Also, the fresher the eggplant, the less bitter.

Some people are sensitive to eggplants bitterness, and others not.  Therefore, this may be a step you can skip if you don’t notice the bitter flavor of eggplant. Continue reading

Lemon Dill Zucchini Fritters with Yogurt Sauce

Lemon Dill Zucchini Fritters with Yogurt Sauce ny Alison's Allspice I ate these lemon dill zucchini fritters with yogurt sauce for dinner last week.  It was one of those nights that I just didn’t want to make anything else.  But that’s how I roll.

I’m an entree girl, very seldom do I make a main and side dish.  That’s why all my veggie burger recipes make 4, because I eat 2 for dinner!  Also, egg rolls.  I eat them as an entree as well.  It’s tasty.  Why not? Continue reading

Lemon Butter Asparagus Ravioli

Lemon Butter Asparagus Ravioli by Alison's AllspiceFriends, this recipe might be my favorite new fast and easy meal! I usually have time to take some prep pictures while cooking a recipe. When I was making this lemon butter asparagus ravioli recipe for the blog, I ran out of time because it cooks so quickly!

It is seriously simple, and absolutely delicious!  Boil ravioli, chop asparagus and garlic, squeeze lemon, and melt butter.  That’s it! Continue reading

Lemon Caper Spaghetti with Chickpeas

Lemon Caper Spaghetti with Chickpeas by Alison's AllspiceOn most Saturdays, I find myself at home alone for lunch.  I usually try to go through the fridge and use up leftover ingredients.  Sometimes I do something I might never have tried otherwise, and end up loving it!  That was the case for this lemon caper spaghetti with chickpeas recipe.

This meal used up leftovers from my shrimp pistachio gremolata pasta dish.  I wanted to make a vegan and nut free version, but the dish was lacking protein.  Hence, chickpeas.  I gave them a quick pan fry like I do in this gyro bowl recipe, and viola!  Lunch is served. Continue reading

Creamy Lemon Dill Orzo Soup

Creamy Lemon Dill Orzo Soup by Alison's AllspiceThis creamy lemon dill orzo soup recipe has a surprising ingredient.  When I see creamy soup recipes, I expect to see that some form of dairy makes it creamy.  Milk, sour cream, cheese, or all of the above, for example.

Instead, this recipe uses eggs to achieve its velvety, creamy texture.  For a long time I shied away from recipes that cook eggs by tempering them in hot liquid.  It sounds scary if you’ve never done it. Continue reading

Lemon Asparagus Orzo with Shrimp

Lemon Asparagus Orzo with Shrimp by Alison's AllspiceEvery spring I go crazy over asparagus.  This might be my last asparagus post this season.  Maybe.  Anyway, this lemon asparagus orzo with shrimp is a great recipe to end on, because it’s seriously delicious!

All the flavors of this dish pair perfectly. The asparagus is earthy, the lemon is bright, and the shrimp is sweet. Salt and spice are the only flavor profiles missing, and very easy to mix in with a little salt and pepper! Continue reading

Garlic Black Olive Tapenade with Parsley

Garlic Black Olive Tapenade by Alison's AllspiceTapenade (pronounced top-ah-nod) is a french dip or spread made from olives and other flavorful pairings such as capers and anchovies. I don’t stock anchovies as a pantry staple, therefore my garlic black olive tapenade is a vegan version of the classic!

I love garlic, and it pairs perfectly with the olives and capers in the tapenade.  Did you know that garlic ranks number two as a highly beneficial superfood (right behind turmeric)?  It has been linked to reducing/preventing heart disease, stroke, cancer, and infections (source). Continue reading

Tuna Meatball Poboy Sandwiches

Tuna Meatball Poboy Sandwiches by Alison's AllspiceHave you ever enjoyed a poboy sandwich?  They are a New Orleans classic often times filled with fried seafood.  I made tuna meatball poboy sandwiches to reflect the classic seafood filling, but with a fun new twist! Continue reading

Moroccan Chickpea Carrot Burger

Moroccan Chickpea Carrot Burger by Alison's AllspiceThe bold spices of this Moroccan chickpea carrot burger are balanced by sweet carrots. Carrots are one of the veggies I always keep on hand.  In the last few weeks, all I have been able to find are whimpy, skinny, pencil sized carrots!

These small carrots are so frustrating for peeling and chopping.  You have to deal with a million carrots instead of a few large ones.  So instead, I found ways to use my carrots by shredding them.   Continue reading
