Dill Cauliflower Fritters with Lemon Yogurt Sauce

Dill Cauliflower Fritters with Lemon Yogurt Sauce by Alison's AllspiceThese dill cauliflower fritters with lemon yogurt sauce are the perfect light meal for me.  Cauliflower keeps things light and a lemon-spiked Greek yogurt sauce adds a little protein boost to keep you full.

I started making these fritters because I always seemed to have a half head of cauliflower in the fridge that needed to be used. You know, the kind that is starting to get those ugly brown spots that no one wants to eat even though it doesn’t taste different. Continue reading

Honey Harissa Sheet Pan Tofu

Honey Harissa Sheet Pan Tofu by Alison's AllspiceThis honey harissa sheet pan tofu has made it into our regular rotation of dinners for a lot of reasons.  The texture of the tofu is amazing, the whole thing is super easy, and you can make simple swaps for what you have on hand.

Have you tried ripping tofu by hand?  It creates lots of edges that all get crispy when baked with starch and yields some of the crispiest tofu.  On top of that, it is kind-of fun and easy just getting into the tofu block with your hands. Good for stress relief, or a good option for kids to help out in the kitchen. Continue reading

Summer Squash Anchovy Pasta

Summer Squash Anchovy Pasta by Alison's AllspiceThis summer squash anchovy pasta recipe has a surprising combination of flavors and textures that frankly work really well together. The summer squash is cooked down along with onion and garlic to make a silky-smooth, creamy sauce for the pasta.

Besides the aromatics, the sauce is flavored largely by anchovies.  They add just the right amount of funk to the dish to make it interesting. Continue reading

Chickpea Harissa Bread Soup

Chickpea Harissa Bread Soup by Alison's AllspiceThis chickpea harissa bread soup is a variation of lablabi, a Tunisian chickpea stew.  The traditional stew has a thin broth with chickpeas served over toasted bread. This version is also served over toasted bread, but the broth is thick and creamy.

The Italians also have a version of bread soup, usually made with stale bread and tomatoes.  Italian bread soup has you add the bread to the pot at the end of cooking.  I prefer this version of bread soup where the bread is toasted and added to the bowls. It maintains more texture, kind-of like a crouton. Continue reading

Healthy Greek Yogurt Ranch

Healthy Greek Yogurt Ranch by Alison's AllspiceThis healthy Greek yogurt ranch is better than bottled ranch for a wide variety of reasons. First of all, it tastes better! The yogurt and fresh lemon juice add tang that you would expect from a traditional buttermilk ranch and the fresh herbs have a distinctly bright flavor that you will never get in a bottle.

Beyond the amazing flavor, this recipe is very easy to make. Simply mix together all the ingredients! I almost always have a tub of Greek yogurt in the fridge, so if you are the same then all you need are the herbs.  Continue reading

Smoked Tofu Schnitzel

Smoked Tofu Schnitzel by Alison's AllspiceI love my homemade smoked tofu recipe, and I love even more finding delicious ways to use it.  This smoked tofu schnitzel is crunchy, chewy, and flavorful.

When I considered trying a tofu schnitzel recipe, I was worried it would be bland, just like tofu.  You can make tofu delicious by letting it absorb other flavors, but simply breading and frying it didn’t seem like that would do the trick alone.

I decided to go with my smoked tofu instead because it is already prepped with loads of flavor.  All you have to do is slice it, bread it, and fry it!  Oh, and perhaps choose a sauce. Continue reading

Lemon Parmesan Kale Salad

Lemon Parmesan Kale Salad by Alison's AllspiceI have a secret to tell you.  I love making bread, and I have been making a lot of sourdough lately.  So much that I have to find inventive ways to use it to keep my supply fresh, like topping this lemon parmesan kale salad with toasted sourdough breadcrumbs.

Lemon parmesan is a classic pairing of flavors that cannot be beat.  Fresh lemon is bright and refreshing while parmesan is full of rich umami.  Adding toasted breadcrumbs takes this simple salad to the next level. Continue reading

Lemon Caper Bay Scallops with Asparagus

Lemon Caper Bay Scallops with Asparagus by Alison's AllspiceTo me, bay scallops seam to be underrated as a seafood option.  They are inexpensive but still have great seafood flavor.  If you haven’t had them in a while, give them a try again in this recipe, lemon caper bay scallops with asparagus.

My only comment about bay scallops is that they release a lot of moisture when cooked, so they are difficult to get a sear on them like you can larger scallops. Continue reading

Smoky Trout Tacos with Lemon Garlic Aioli

Smoky Trout Tacos with Lemon Garlic Aioli by Alison's AllspiceI don’t think there is such a thing as a perfect fish taco.  It can’t be because there are just so many good ways to do it, no one recipe could ever be the best.  Nevertheless, I am always in the pursuit of perfecting recipes and fish tacos are easily a food group in my house, so here is another variation for you to try: smoky trout tacos with lemon garlic aioli.

Can we talk about aioli for a minute, please?  Does anyone actually use eggs to make their aioli?  Maybe I’m the only one that is totally hooked on the ease of using mayo, but what can I say?  It’s delicious, easy to make, and I don’t have to fuss with raw eggs.  Win-win in my book. Lemon and Green Olive Pasta

Lemon and Green Olive Pasta by Alison's AllspiceThis simple bright lemon and green olive pasta is for those dreary winter days when you need a fresh pick-me-up.  Think of it like a trip to the beach.  The lemon represents the bright sunshine, and the briny olives represent the scent of the ocean. Continue reading
