Kale Smoothie by Alison's AllspiceThis spring, I was eating kale salads on repeat and still had more kale than I could use coming out of my garden. I decided to try blanching and freezing it with the intent to make a kale smoothie recipe, which is finally here!

There are a lot of kale smoothie recipes on the internet, and not all of them are good, in my opinion. I love kale, its flavor does not bother me. Today I have a great fall recipe for you to try, purple sweet potato and kale mini crustless quiches, and there will be many more recipes coming once winter break has started!

Quiches are supposed to be more custard-like than a fritatta or egg bake because they have more dairy in them.  I love adding cottage cheese for a portion of my dairy because it adds a boost of protein.  The little chunks also create air pockets when baking, so this recipe will yield a light and fluffy quiche.  Continue reading

Easy Southwest Chopped Salad

Easy Southwest Chopped Salad by Alison's AllspiceI started making this easy southwest chopped salad for lunches last summer and it is still a favorite.  Although this salad requires a little chopping, I still consider it easy because I almost always have all the ingredients on hand.

Having a well stocked pantry makes it easy to whip up a good lunch without much pre-thought.  I use canned black beans, frozen corn, jarred jalapenos, bagged tortilla chips, hot sauce and bottled ranch.  I always have cabbage and onions in the fridge.  Therefore the greens are ususally the only thing I need to put on the grocery list! Apple Cheddar Kale Salad by Alison's AllspiceIt is finally here.  It’s salad season!  I love this time of year because my garden is bursting with fresh lettuce, kale, and arugula. I will eat salad after salad until I grow tired, but that is far from the goal. The goal is finding ways to keep salad interesting, so I share with you this apple cheddar kale salad.

Apple and cheddar are a classic combination of sweet and salty.   Pair that with an apple cider vinaigrette to keep things savory and some sunflower seeds for crunch, and you have a winner salad. Continue reading

Sweet Potato Kale Quinoa Bowl by Alison's Allspice Bowl meals come by many names,  Buddah bowls, power bowls, nourish bowls, grain bowls, etc., and are just about the easiest thing to make.  You just toss everything into a bowl!  The ratio of ingredients is what  I like best about bowl meals, including this sweet potato kale quinoa bowl.

This bowl is not a kale salad, and it is not a quinoa salad either. It is truely a bowl meal that is balanced with grains and proteins, fresh vegetables and cooked vegetables, as well as crunchy and soft textures. Continue reading

Garlicky Kale Caesar Pasta Salad by Alison's AllspiceThe first time I came across this idea to turn Caesar salad into a pasta salad, it was in a cooking magazine.  After a quick google search, it appears that I am behind in the game because kale caesar pasta salad is definitely a thing already.

Lentil Kale Fritters

Lentil Kale Fritters by Alison's AllspiceI came up with the idea for these lentil kale fritters when I was trying to find a new way to use up my copious garden kale.  Two packed cups of chopped kale is a lot of kale, but it cooks down so that it folds in with the lentils in a perfect 1:1 ratio.

These fritters don’t feel like you are eating tons of greens either thanks to the texture of the lentils.  The flavor it also bright and not too earthy thanks to the tomato paste, Dijon, parmesan and basil.  Continue reading
