Vegetarian Lentil Loaf with Tomato GlazeMeatloaf was my favorite meal as a kid, especially mom’s recipe.  I would even help out in the kitchen to get some of mom’s meatloaf!  When I turned to a mostly vegetarian diet, I didn’t expect any kind of loaf in my future.  Meat imitations often times fail.  They simply don’t, and won’t, taste like the real thing.  I was hesitant to try a loaf recipe, however, my love for lentils has grown exponentially in the last few years.  I decided to give a lentil loaf a try and we found another keeper for the rotation!  My vegetarian lentil loaf with tomato glaze tastes nothing like meat (and shouldn’t), but is delicious on it’s own accord. Super fast Vegetarian White ChiliThe first time I had white chili, I was being a judge in a chili cook off.  I was in love from first bite!  White chili doesn’t have the typical flavors of chili that use things like chili powder. Instead the green chili flavor is strong, which I love. Tempeh Gyros with TzatzikiWhen I first started trying meatless meals, I loved tofu, and disliked tempeh.  There are lots of folks out there that don’t like tofu, but I wasn’t never one of them.  Tempeh has taken some time for me to figure out how to prepare properly.  Tempeh is a fermented soybean cake that has a unique flavor, unlike tofu which must be flavored.    The nutty flavor of tempeh works well in these tempeh gyros with cucumber tzatziki.  This recipes has completely changed my mind on tempeh! Mustard Greens and Smoked Trout Rice BowlBack in this post about my CSA, I mentioned that mustard greens was the most difficult ingredient I had received.  Mustard greens are rather bitter, and some people love the flavor.  For me, I wanted that bitter horseradish-y flavor to be something subtle within a dish.  I attempted some mustard green lo mein that didn’t work out, and some mustard greens salad, which was way to much for me!  This mustard greens and smoked trout rice bowl was exactly what I was looking for!   Continue reading
