Roasted Root Vegetables with Parmesan Wheat Berries

Root Vegetables plus Brussle Sprout

Roasted root vegetables are a wonderful staple of the season.  Enjoy as many root vegetables as you can now, because soon spring and summer produce will be back.  I added one vegetable to this mix that is not a root vegetable: Brussels sprouts!  It is also a seasonal veggie, that grows best in colder temperatures, and I couldn’t make this dish without something green! African Peanut Stew with Kale

African Peanut Stew

When I first came across the idea of peanut stew, I did not like the sounds of it.  Peanuts will get soggy when they’re stewed, and that texture might be weird.  They are great made into butter, however. The creamy butter from the peanuts is the star in this dish, not stewed peanuts.  Don’t be afraid! Continue reading

Ravioli Bake with Spinach and Mushrooms

Today I have a simple recipe to share.  I have always loved ravioli, a comfort food from my childhood.  This bake is lasagna like, with layers of noodles, cheese, sauce, and veggies.  If you still have family hanging around after the holidays, this dish can be adapted to fit anyone’s taste.  It goes in and out of the oven in a cinch!
