Zucchini Corn and Bean EnchiladasHappy New Year everyone!  This is my first post of the new year, and I’m so excited to share my plans for the year.  As I shared in my best of 2016 post, I recently made a move into a house where I have lots of space.  Now that I have space, I’m very excited to be able to establish a large garden.   Last year I joined a CSA because I knew I wouldn’t get a garden planted in time.  I did get to grow a few plants, but this year I want to see the garden expand with lots of vegetables, including some spring and fall crops.  One of my favorite veggies to grow is zucchini, which is the inspiration for today’s recipe.  Zucchini corn and bean enchiladas are simple and easy, especially if you have zucchini growing in your garden. Super fast Vegetarian White ChiliThe first time I had white chili, I was being a judge in a chili cook off.  I was in love from first bite!  White chili doesn’t have the typical flavors of chili that use things like chili powder. Instead the green chili flavor is strong, which I love. Tempeh Gyros with TzatzikiWhen I first started trying meatless meals, I loved tofu, and disliked tempeh.  There are lots of folks out there that don’t like tofu, but I wasn’t never one of them.  Tempeh has taken some time for me to figure out how to prepare properly.  Tempeh is a fermented soybean cake that has a unique flavor, unlike tofu which must be flavored.    The nutty flavor of tempeh works well in these tempeh gyros with cucumber tzatziki.  This recipes has completely changed my mind on tempeh!
