Chinese Mustard Baked Tofu Sandwiches by Alison's AllspiceIt’s redux time again!  This month’s theme was: Grab your nearest cookbook and ReDux the recipe on page 201, 17, 217 – or any combination of the number ‘2017.’   I chose to redux Chinese Mustard Baked Tofu Sandwiches from the Moosewood cookbook.

I don’t have a large collection of cookbooks, but I do love the moosewood cookbook. The recipe I chose was from page 120 for a grilled Chinese mustard sandwich with sauted peppers and onions.  Continue reading

Quick Cilantro Garlic Seared Shrimp

Quick Cilantro Garlic Seared Shrimp by Alison's AllspiceYou know, I have really been on a cilantro kick recently!  I didn’t always like cilantro,  however.  I found it to be an incredibly over-powering flavor and never used it in my dishes.  It’s funny how tastes change, though.  I tried cilantro on this jalapeno tomato and cilantro pizza and couldn’t get enough.  I started trying it on other things, like cilantro lime black bean salad, and this weeks sweet potato salad.  Needless to say, I’m hooked!  This recipe, quick cilantro garlic seared shrimp is a weeknight favorite because shrimp cook in a flash! Sweet Potato Black Bean Cilantro Salad

Sweet Potato Black Bean Cilantro Salad by Alison's AllspiceOne ingredient I always keep in my fridge for easy nutritious meals is sweet potato.  I like to dice them into small pieces and either roast in the oven, or fry in a skillet.  They can stand alone as a side, or be tossed into salads, soups, stews and bowls.  This sweet potato black bean cilantro salad is my favorite way to use sweet potatoes. Black beans add plenty of protein to help you stay full, and cilantro adds plenty of fresh, bright flavor!  Eat a large serving as a main dish, or a small serving as a side. Continue reading

Buffalo Cauliflower Blue Cheese Pizza

Buffalo Cauliflower Blue Cheese Pizza by Alison's AllspiceI spend a fair amount of time over on pinterest looking at recipe ideas and getting inspired by other bloggers.  Buffalo pizza’s caught my eye there because I love all things buffalo.  Reviewing recipes, I noticed that the sauce you can use on a buffalo pizza varies quite greatly.  Some people use the buffalo sauce as a base, but that means every bite is is loaded with spice and their is no relief from the heat.  Some recipes use bottled ranch dressing, but I didn’t like the sound of that either.  I developed my buffalo cauliflower blue cheese pizza with a homemade blue cheese pizza sauce! Homemade Teriyaki Baked Tofu

Homemade Teriyaki Baked Tofu by Alison's AllspiceHave you ever bought baked tofu at the store?  It’s a handy product that is seasoned, cooked, and ready to throw into any dish.  When I was first transitioning from being an omnivore to vegetarian, I found that I loved tofu!  This is not the case for most people, they find the texture off-putting, so yes, I know I’m weird.  I started experimenting with all kinds of ways to enjoy tofu (including this smoked tofu recipe).  This homemade teriyaki baked tofu makes weeknight dinners even faster! Creamy Spinach Artichoke Quesadillas

Creamy Spinach Artichoke Quesadillas by Alison's AllspiceThis week has been a very busy week for me (stories to come!), and has left me with little time to do my usual menu planning.  When dinner time came around the other night, I was scrounging through the fridge trying to come up with a plan.  I always start by looking at what vegetables I have, because I try to center my eating habits around getting plenty of veggies.  When I realized the best combo I had was spinach and artichoke, all I needed was cheese and a delivery system to make a meal.  I used my leftover spinach tortillas from my Zombie Burritos recipe to make these creamy spinach artichoke quesadillas! Roasted Broccoli Steaks and Chickpeas with Yogurt Sauce

Roasted Broccoli Steaks and Chickpeas with yogurt sauce by Alison's AllspiceThis months recipe redux theme was to create a gut-healthy meal.  When I think of gut health, I think of two things: fiber and probiotics.  I made roasted broccoli steaks and chickpeas with yogurt sauce.  Yogurt is my favorite food-based probiotic, and it makes a delicious, creamy sauce.  I choose broccoli and chickpeas because they have two different types of fiber that are both great for gut health- more on this later.  Finally, to make it a full meal, I plated the roasted broccoli and chickpeas over barley!
