Kimchi and Fried Egg Sandwich

Kimchi and Fried Egg Sandwich by Alison's AllspiceThis kimchi and fried egg sandwich has been on my to-do list for a long time now.  And with good reason, it is Delicious (with a capital-D!), and soooo easy to make.

I have made it known that I love the combination of tangy kimchi with a runny egg yolk, like in this kimchi fried rice recipe.  I just can’t get enough! Continue reading

Spicy Vegetarian Chipotle Quinoa Sliders

Spicy Vegetarian Chipotle Quinoa Sliders by Alison's AllspiceHow many times have you adapted a favorite recipe to make it meatless?  For vegetarians, this is a common practice. I adapted these spicy vegetarian chipotle quinoa sliders from my chipolte fish sliders recipe.

I identify as a pescatarian.  In other words, a vegetarian who still eats fish.  I post 90% vegetarian recipes, therefore, I attract more meatless-eaters with my recipes than fish-eaters. Continue reading

Vegetarian Quinoa Pizza Burgers

Vegetarian Quinoa Pizza Burgers by Alison's AllspiceFor me, veggie burgers don’t necessarily need to taste like a burger.  Instead, they can be a delivery system for fun flavors. Like these Jamacian Jerk Plantain Burgers, or these Moroccan Carrot Veggie Burgers, or today’s recipe for vegetarian quinoa pizza burgers.

I think one of the best ways to get great flavor in something like a veggie burger is to load it up with different seasonings.  Make it complicated for your taste buds to figure everything out, and you will likely enjoy the flavors more. Continue reading

Kimchi Fried Rice with Peas and Cabbage

Kimchi Fried Rice with Peas and Cabbage by Alison's AllspiceAfter the photo shoot for this kimchi fried rice with peas and cabbage was finished, I started nomming like normal.  Then, I realized I forgot to photograph piercing the egg (a classic sunny side up egg shot).  I looked down at my bowl, and thought, 3/4 gone is actually a pretty good shot to see what it really looks like.

Did I go back to the studio and capture it?  No. It was too good to stop eating!  It was everything I could do to savory every bite instead of inhaling it in two seconds. Continue reading

Asparagus Mushroom Potato Hash

Asparagus Mushroom Potato Hash by Alison's AllspiceFor all of you that love asparagus as much as I do, lets try some for breakfast!  I serve this asparagus mushroom potato hash with sunny side up eggs for a filling breakfast that is full of veggies.

How often do you eat veggies for breakfast?  Eating your vegetables at breakfast is a great way of incorporating more of them into your diet.  Veggies for breakfast is definitely something that I don’t do often enough. Continue reading

Giant Green Veggie Burgers

Giant Green Veggie Burgers by Alison's AllspiceThis month’s recipe redux theme was Movie Inspiration, because the Oscars are right around the corner!  Therefore, I chose to make giant green veggie burgers after one of my favorite movie characters, the hulk!

This recipe is a great way to sneak in extra veggies.  Broccoli is one of my favorite veggies, but not so much for my husband.  After trying these burgers, he said he never would have guessed they had broccoli in them! Continue reading

Creamy Lemon Dill Orzo Soup

Creamy Lemon Dill Orzo Soup by Alison's AllspiceThis creamy lemon dill orzo soup recipe has a surprising ingredient.  When I see creamy soup recipes, I expect to see that some form of dairy makes it creamy.  Milk, sour cream, cheese, or all of the above, for example.

Instead, this recipe uses eggs to achieve its velvety, creamy texture.  For a long time I shied away from recipes that cook eggs by tempering them in hot liquid.  It sounds scary if you’ve never done it. Continue reading

Pepper and Onion Naan Breakfast Pizza

Pepper and Onion Naan Breakfast Pizza by Alison's AllspiceBreakfast pizza has long been a favorite food of mine.  I don’t make it very much, however, because it’s usually not very healthy, and it isn’t traditionally fast.  This pepper and onion naan breakfast pizza is healthier, as well as quick and easy!

Have you tried naan flat breads?  I was first exposed to them as an side for curries, but they have many more uses!  I used toaster size naan (mini) in this recipe, which was perfect for a single egg! Continue reading

Buffalo Quinoa Chickpea Burgers

Buffalo Quinoa Chickpea Burgers by Alison's AllspiceWho else is ready for football playoffs?!  For me, half the fun of football is the food and drink, so this year I plan to make these buffalo quinoa chickpea burgers, topped with blue cheese!

I don’t make regular veggie burgers.  For me, vegetables don’t have the texture, or the taste that I remember in a real burger.  I still love the format, but try to make it taste like something different. Continue reading

Vegetarian Bibimbap Spaghetti Squash Bowls

Vegetarian Bibimbap Spaghetti Squash Bowls by Alison's AllspiceRecently, I have found myself in a love-hate relationship with spaghetti squash.  It is a very tasty low-carb option, but,  I don’t like it as a substitute for spaghetti noodles,  It’s just not the same for me.  Instead I use the squash is recipes like this vegetarian bibimbap spaghetti squash bowls!

When spaghetti squash is in season in fall, I try to find new ways to use it.  In the past, I have made enchilada spaghetti squash boats and pesto Parmesan spaghetti squash bowls. Continue reading
