Cold Cucumber Crab Noodle Bowl by Alison's AllspiceThis cold dinner idea is perfect for summer.  We enjoyed this cold cucumber crab noodle bowl after mowing the lawn.  It filled us up without heating us up, and it only required 2 1/2 minutes of cooking!

The serving size on these bowls is on the large size.  I used this meal as  post-work out dinner, so lots of carbs and protein were appreciated.  However, the recipe as written could be split into 3 servings for a lighter meal. Continue reading

Norwegian Cod Grain Bowl with Lingonberry by Alison's AllspiceI was introduced to lingonberry when I married into a Norwegian family.  It is a tangy fruit, much like cranberries or currents.  I made this Norwegian cod grain bowl with lingonberry and dill to explore some classic Norwegian flavor combinations.

I made this recipe with cod, because it is a traditional Norwegian fish.  However, I recommend shopping for pacific cod, because Atlantic cod is not a sustainable choice, as their populations have been over fished.

Grilled Clam Stuffed Mushrooms with Tomato Relish by Alison's AllspiceI have a gigantic collection of cooking magazines that I have collected over the years.  I’m pretty serious about my collection as well.  My magazines are filed away according to the month published.  When ever I need some recipe inspiration, or want to do some light reading I go find this months file.  I tab all my favorite ideas so they are easy to find, but sometimes I will reread the magazine and see how my tastes have changed since I first tabbed it.  Recently I did this and came across a stuffed mushroom recipe with a red pepper relish.  I couldn’t believe that I hadn’t tabbed that recipe! I instantly wrote up my own variation and dubbed it worthy of a grill out night.  And thus, grilled clam stuffed mushrooms with tomato relish was born.  Continue reading

Tzatziki Cucumber Dill Crackers

This week I have been having a lot of fun playing around with cracker toppings.  Bite size food has to be able to impress in that single bite, so you know the flavors have to be good.  Therefore, sampling all those flavors, such as my Banh Mi Crackers, has been a lot of fun, and delicious.  The Breton Crackers that I received samples of have been great.  I received the original flavor, which is quite tasty, and really  enjoy their light and crisp texture.  The size of the cracker is large enough to top with lots of veggies and smear with sauces, such as my Tzatziki Cucumber Dill Crackers.
