Follow my blog with BloglovinPlantain Black Bean Rice Bowls with Cilantro PestoA few years ago I took a trip to Puerto Rico and had plantains for the first time.  I had always assumed that they were just like bananas, but the truth is that they are pretty different.  A plantain is more well suited for cooking because it has a firm texture.  Banana’s are usually reserved for baked goods because they are soft while plantains will hold up to the cooking process. Fish Tacos with Pineapple Salsa

Fish tacos with pineapple salsa and red cabbage slawIt’s Monday morning and it’s raining.  Days like this really make you appreciate the weekend!  The weather this weekend was beautiful and I managed to get outside to do some yard work.  It has been a long spring for us in Southern Illinois, and I have been trying to soak up as much as possible before the summer heat sets in.  These fish tacos with pineapple salsa are a great refreshing dinner after spending the day in the sun!
