Lentil Tacos with Asparagus Pico de Gallo

Lentil Tacos with Asparagus Pico de Gallo by Alison's AllspiceHappy May everyone!  Spring is such a great time of year, for so many reasons.  Warming weather, green grass and flower, and asparagus! My husband said I should have called these spring tacos, but I thought lentil tacos with asparagus pico de gallo was more descriptive.

These tacos are bright and full of fresh flavors thanks to the grassy asparagus, fresh cilantro and lime juice, as well as the tomatoes. Continue reading

Mole Jackfruit Street Tacos

Mole Jackfruit Street Tacos by Alison's AllspiceOn Monday, I shared a recipe for easy homemade mole sauce. Today, I am going to share one of my favorite ways to use that mole sauce, mole jackfruit street tacos!

If you haven’t tried jackfruit yet, now is the time!  It’s stringy texture resembles that of pull pork, and it makes an excellet veggie street taco! Continue reading

Teriyaki Mushroom Tacos

Teriyaki Mushroom Tacos by Alison's AllspiceWhen I want to create a new recipe, and I want it to be a hit for my family, tacos are the way to go. These teriyaki mushroom tacos are super flavorful, made with a homemade teriyaki sauce and sriracha mayo!

My husband thinks that tacos are a food group.  I can’t disagree, tacos are pretty much the most awesome way to devour some deliciousness. The tortilla should have an award for being the best food delivery service. Continue reading

Goat Cheese Baked Artichoke Hearts

Goat Cheese Baked Artichoke Hearts by Alison's AllspiceThis spring, I am trying to clean out the freezer and the pantry.  At some point when frozen artichoke hearts were on sale, I bought a bunch!  What can I say, I love a bargain.  These goat cheese baked artichoke hearts have been a delicious way to use them up!

I have been on a bit of a dill craze, recently, using it in recipes such as this creamy lemon dill orzo soup, or this Norwegian cod grain bowl. It is a flavor that I usually associate with summer, so I guess I’m craving some warm weather! Continue reading

Mushroom Lentil Vegetarian Lasagna

Mushroom Lentil Vegetarian Lasagna by Alison's AllspiceMy husband rolls his eyes every time I say we’re having lasagna…  He says it’s a food all women love, and maybe he’s right.  But, what’s not to love?  Mushroom lentil vegetarian lasagna is what’s for dinner!

I usually think of vegetarian lasagna being layered with shredded and chopped veggies.  I have a favorite version that is loaded with carrots, zucchini, spinach, mushrooms, and onion.  You can find the small batch version of it here. Continue reading

Giant Green Veggie Burgers

Giant Green Veggie Burgers by Alison's AllspiceThis month’s recipe redux theme was Movie Inspiration, because the Oscars are right around the corner!  Therefore, I chose to make giant green veggie burgers after one of my favorite movie characters, the hulk!

This recipe is a great way to sneak in extra veggies.  Broccoli is one of my favorite veggies, but not so much for my husband.  After trying these burgers, he said he never would have guessed they had broccoli in them! Continue reading

High Protein Mushroom Swiss Pasta Bake

High Protein Mushroom Swiss Pasta Bake by Alison's AllspiceThis month’s recipe redux theme was New Year, New Ingredient.  My new ingredient is chickpea pasta!  I use it to create this high protein mushroom swiss pasta bake.

Usually, I wouldn’t make a dish like this for dinner.  It’s just pasta, veggies, and cheese. There’s no specific source of protein, which I need as a 90% vegetarian who likes to work out. Continue reading

Pepper and Onion Naan Breakfast Pizza

Pepper and Onion Naan Breakfast Pizza by Alison's AllspiceBreakfast pizza has long been a favorite food of mine.  I don’t make it very much, however, because it’s usually not very healthy, and it isn’t traditionally fast.  This pepper and onion naan breakfast pizza is healthier, as well as quick and easy!

Have you tried naan flat breads?  I was first exposed to them as an side for curries, but they have many more uses!  I used toaster size naan (mini) in this recipe, which was perfect for a single egg! Continue reading

Buffalo Quinoa Chickpea Burgers

Buffalo Quinoa Chickpea Burgers by Alison's AllspiceWho else is ready for football playoffs?!  For me, half the fun of football is the food and drink, so this year I plan to make these buffalo quinoa chickpea burgers, topped with blue cheese!

I don’t make regular veggie burgers.  For me, vegetables don’t have the texture, or the taste that I remember in a real burger.  I still love the format, but try to make it taste like something different. Continue reading
