Fresh 6 Layer Bean Dip

Football season starts tomorrow!!  I don’t know what I love more, watching the ball game, or planning the food and drink!  We love to watch the games, crowded around the TV with a plate full of finger foods and snacks.  This recipe for bean dip is so simple to throw together before the game and is always a hit!

Arugula Pesto Pasta

Pesto and pasta were made for each other.   Any kind of pesto, and any kind of pasta.  Tah Dah!  You have a delicious meal.  However, If you have never had arugula pesto, you have to give this a try.  Arugula is from the mustard family and is known for its peppery flavor.  When concentrated into a pesto, it’s a flavor explosion!

Squash Ribbons with Cheese Ravioli

I am trying to savor all the zucchini and summer squash I can right now because I know the season will be behind us soon.  These quick growing squash varieties are my favorite kinds of squash.  I love the fresh mild flavor and their versatility; you can put them in with almost anything!

Farmers Market Quesadilla

I needed a quick, single serving, lunch today and this quesadilla hit the mark!  I went to the farmers market this morning knowing that I had one tortilla left over in the fridge.  I circled like a vulture checking out all the fresh produce trying to decide what I should fill the tortilla with.

Peach Pizza with Blue Cheese and Balsamic Drizzle

Peach pizza with blue cheese and balsamic drizzle

This recipe is a very different twist on pizza.  Fresh peaches make it a summertime classic.  Blue cheese and a balsamic reduction drizzle take this peach pizza over the top!  I remember the first time I saw the idea for this recipe and I couldn’t wait to try!  Find yourself some peaches while they are still in season, you’ll thank me. Simple Bean Enchiladas

Enchiladas are one of my favorite week night dinners.  All you have to do is stuff a tortilla, smother in sauce and cheese, and bake.  Easy.  You can stuff an enchilada with almost anything it seems.  However, the more ingredients you use, the more prep work you have.  And you need a filling that will hold together instead of tumbling out of the enchilada with every chance.

Greek Wheat Berry Salad

Greek is one of my favorite salad types.  Greek salads always include bold flavors and lots of color!  This salad is perfect for the summertime using fresh and widely available produce, like cucumbers and tomatoes.  I like to make a big batch to take to work all week long.  Everyone is jealous at lunch time when I open up my mug!

Chicago-Style Deep Dish Pizza

Pizza is an absolute favorite around here, and this pizza explodes with flavor!  We eat this pizza as a once-in-a-while treat because it is definitely a splurge.  A must try if you are a pizza fan, however.  A Chicago-style pizza has the cheese on the bottom and the sauce on the top because it has a long baking time and the sauce on the top prevents the cheese from burning. This layering method works wonders for the flavor as well.   The diced tomato sauce roasts on the top of the pizza, melting the cheese into a gooey center, all held together with a thick crust.  I’m getting hungry just writing about it!

Taco Pizza

Taco pizza is a total comfort food for me.  I grew up in a small town where the only fast food was the local gas station that made pizza.  We didn’t have take out pizza often, but it was always a treat.  Taco pizza was always my favorite, so I created a taco pizza that is vegetarian to remind me of the old comfort food I grew up on.

Grilled Zucchini Sandwiches

Happy 4th of July!  This Independence Day don’t leave your vegetarian friends out of your menu planning.  This sandwich is simple enough that it can be prepared in your backyard, or a gathering at the park. Enjoy it while celebrating our country’s independence, watching fireworks, and of course, grilling!

Quality ingredients are what shine through in this dish.  Crusty caibatta bread (pictured below right) makes a ideal delivery system for perfectly grilled veggies. My veggies of choice are zucchini and mushrooms. Use a grill topper to keep veggies from slipping through the grill rack, like I did with my mushrooms (pictured right).  Additional veggies are also great to much on while you grill, like the stray carrot that I hadn’t eat yet before this photo was snapped.    Play around with your vegetables of choice, or if hosting a party, have multiple options available for guests to choose from.
