Avocado Tostadas

Tacos are considered a kings food in my house.  Tostadas are flat tacos, right?  Well, not really.  Tostada means “toasted.”  It’s kind-of hard to toast a taco because all the ingredients are wrapped up inside it’s crunchy shell (or soft shell depending on your preference).  Tostadas and tacos have very similar (if not the same) ingredients, therefore, we are making room for toasty tostadas at the king’s table!  Especially these avocado tostadas!

Vegetarian Taco Stuffed Shells

Happy New Year Friends!  This is my first post in 2016, and I’m very excited to start my first full calendar year of blogging.  Creative cooking is one of my largest inspirations in the kitchen.  I love meals that smash together two ideas to create something new and different, like these vegetarian taco stuffed shells!

Buffalo Queso Dip

This dip is a riff on Buffalo Chicken Dip.  Buffalo is one of my favorite flavors that I miss.  This dip is an awesome way to enjoy it.  I am planning on making it to celebrate the last regular season football game coming up this Saturday, but it would work well at a new years eve celebration as well!

Ravioli Bake with Spinach and Mushrooms

Today I have a simple recipe to share.  I have always loved ravioli, a comfort food from my childhood.  This bake is lasagna like, with layers of noodles, cheese, sauce, and veggies.  If you still have family hanging around after the holidays, this dish can be adapted to fit anyone’s taste.  It goes in and out of the oven in a cinch!

Portabella and Lentil Pot Pie

It is raining and cold outside today.  A perfect day for a rich and warming comfort food like pot pies.  I loved pot pies as a kid, which is why I consider them a total comfort food.  This version is made with mushrooms and lentils to make it hearty and filling.  Veggies like potatoes and carrots make it classic.  It will even work well as a vegetarian main dish at thanksgiving, for all your veggie friends and family!

Three Bean Chili

Last week I was all about savoring summer.  I even picked up a few zucchinis at the farmers market this weekend because I don’t want to let go!  I finally have realized however, that I must embrace fall because those bone chilling days of winter will come shortly after.  Nothing says fall to me like chili.  This chili recipe is great for this time of year when you can still get locally grown peppers.

Southwest Summer Squash Gratin

Summer squash is almost gone for the season.  Sigh. Depending on where you live you might be able to find some last of the season fruits to enjoy in this dish!  Buttery summer squash makes an excellent gratin.  I jazzed this southwest summer squash gratin up by adding jalapeno and sweet corn.  A little spicy and sweet balance nicely and add something special to this gratin.

Cracker Crust Pizza

Cracker Crust Pizza by Alison's AllspiceHello Friends!  This is another recipe fantastic for football season!  Some thin crust pizzas lack in crust texture. You get a slice and it flops in your hand.  The flavor is all there, but that’s just because you have a delivery service for ooey-gooey cheese.  This pizza crust is thin and crispy, the best of both worlds!

This is my second post using yeast to make a pizza crust.  I promise, it’s worth the trouble.  You can let the dough rise, or not.  It’s the baking method that matters.  See the photos below of the dough and crust.  The crust is laced with herbs, which add a fresh flavor.  On the first bake, the dough will puff up into a pocket; this separation of the layers allows for extra crisping which make the crust special. Bean and Potato Enchiladas

I love to make enchiladas because they are simple.  Simple ingredients and simple to prep.  All you have to do is make your filling, stuff tortillas, and bake!   Anyone can do that.  This recipe is made almost entirely out of my pantry staples.  It’s easy to add to the end of my weeks meal planning because I generally don’t need many ingredients.
