Avocado Tostadas

Tacos are considered a kings food in my house.  Tostadas are flat tacos, right?  Well, not really.  Tostada means “toasted.”  It’s kind-of hard to toast a taco because all the ingredients are wrapped up inside it’s crunchy shell (or soft shell depending on your preference).  Tostadas and tacos have very similar (if not the same) ingredients, therefore, we are making room for toasty tostadas at the king’s table!  Especially these avocado tostadas!

Buffalo Queso Dip

This dip is a riff on Buffalo Chicken Dip.  Buffalo is one of my favorite flavors that I miss.  This dip is an awesome way to enjoy it.  I am planning on making it to celebrate the last regular season football game coming up this Saturday, but it would work well at a new years eve celebration as well!

Homemade Refried Beans

Refried beans are a simple staple that go into many recipes.  Have you ever tried making homemade?  You’ll be surprised at how simple it really is.  And how good!  I grew up with homemade refried beans, so the canned variety was never good enough.  A lot of canned refried beans are not vegetarian either, and neither was my moms recipe, but that is the great thing about making homemade!  You get to choose what goes into your food.

Three Bean Chili

Last week I was all about savoring summer.  I even picked up a few zucchinis at the farmers market this weekend because I don’t want to let go!  I finally have realized however, that I must embrace fall because those bone chilling days of winter will come shortly after.  Nothing says fall to me like chili.  This chili recipe is great for this time of year when you can still get locally grown peppers.

Bean and Potato Enchiladas

I love to make enchiladas because they are simple.  Simple ingredients and simple to prep.  All you have to do is make your filling, stuff tortillas, and bake!   Anyone can do that.  This recipe is made almost entirely out of my pantry staples.  It’s easy to add to the end of my weeks meal planning because I generally don’t need many ingredients.
