Bean Barley and Mushroom Stew

Bean Barley and Mushroom StewBarley is one of my favorite grains to cook with during the winter.  For a grain, it has comfort food written all over it.  I especially love it in a warm bowl of soup or stew.  When it cooks in a dish like this bean barley and mushroom stew, the starches released make a creamy, silky texture that helps to thicken the stew and make it more luxurious without adding cream. Vegetarian Lentil Loaf with Tomato Glaze

Vegetarian Lentil Loaf with Tomato GlazeMeatloaf was my favorite meal as a kid, especially mom’s recipe.  I would even help out in the kitchen to get some of mom’s meatloaf!  When I turned to a mostly vegetarian diet, I didn’t expect any kind of loaf in my future.  Meat imitations often times fail.  They simply don’t, and won’t, taste like the real thing.  I was hesitant to try a loaf recipe, however, my love for lentils has grown exponentially in the last few years.  I decided to give a lentil loaf a try and we found another keeper for the rotation!  My vegetarian lentil loaf with tomato glaze tastes nothing like meat (and shouldn’t), but is delicious on it’s own accord. It’s hearty, wholesome, and healthy! Continue reading

Zucchini Corn and Bean Enchiladas

Zucchini Corn and Bean EnchiladasHappy New Year everyone!  This is my first post of the new year, and I’m so excited to share my plans for the year.  As I shared in my best of 2016 post, I recently made a move into a house where I have lots of space.  Now that I have space, I’m very excited to be able to establish a large garden.   Last year I joined a CSA because I knew I wouldn’t get a garden planted in time.  I did get to grow a few plants, but this year I want to see the garden expand with lots of vegetables, including some spring and fall crops.  One of my favorite veggies to grow is zucchini, which is the inspiration for today’s recipe.  Zucchini corn and bean enchiladas are simple and easy, especially if you have zucchini growing in your garden. Super Fast Vegetarian White Chili

Super fast Vegetarian White ChiliThe first time I had white chili, I was being a judge in a chili cook off.  I was in love from first bite!  White chili doesn’t have the typical flavors of chili that use things like chili powder. Instead the green chili flavor is strong, which I love. This super fast vegetarian white chili recipe is quicker to make than most chili recipes.  This recipe uses store bought salsa, making it really fast to throw together, which is always a plus!
