Is anyone else ready for strawberry season?! This strawberry arugula salad with strawberry balsamic dressing is loaded with summer flavors!
Fresh picked strawberries are bursting with flavor and are one of my favorite parts of early summer. I shop my local farmers market for the tastiest, fresh summer fruits!
I use strawberries in this salad in two different ways. Fresh on the salad, and blended into the dressing for double the strawberry satisfaction!
This year I grew arugula in my garden, and it is sooooo flavorful! The sweetness of the strawberries balances really well with the strong peppery flavor of arugula!
Variations to the Strawberry Arugula Salad with Strawberry Balsamic Dressing:
- Switch up ingredients for what you have on hand! For example, try almonds instead of sunflower seeds, or goat cheese instead of feta.
- To decrease the sweetness, try white balsamic vinegar instead of dark balsamic.
- When strawberries are out of season, try this same salad with another fruit, like blueberries or raspberries!
- Other ways to use arugula: Mushroom Swiss Arugula Melts or Lemony Zucchini Arugula Pesto!
- 3-4 cups baby arugula
- 4 strawberries, sliced
- 2 TBS crumbled feta cheese
- 1 TBS each: sunflower seeds and diced red onion
- 3 strawberries, chopped
- 1 TBS each: balsamic vinegar and olive oil
- salt and pepper to taste (a few turns of a grinder each)
- Arrange arugula on a plate. Top with sliced strawberries, feta, sunflower seeds, and red onion.
- In a mini food processor, combine vinaigrette ingredients. Process until smooth.
- Serve salad drizzled with the dressing.
