This recipe is a very different twist on pizza. Fresh peaches make it a summertime classic. Blue cheese and a balsamic reduction drizzle take this peach pizza over the top! I remember the first time I saw the idea for this recipe and I couldn’t wait to try! Find yourself some peaches while they are still in season, you’ll thank me.
Don’t be tempted to try this pizza with anything but fresh peaches. I have tried to use frozen and canned peaches to make this pizza when peaches were out of season. Fresh is the only way to go. The flavor of a fresh peach is soooo much better and the texture is better as well.
The combination of sweet peaches, salty cheese, and rich balsamic make a pizza you won’t forget. It’s simple to throw together and will impress all your dinner guests. When all your friends ask you for this recipe, remember to tell them you found it on Alison’s Allspice! Enjoy!
- 1 whole wheat pizza crust
- 2 tsp olive oil
- 1 medium peach, sliced
- ¾ cup mozzarella, shredded
- ½ cup crumbled blue cheese
- ⅓ cup balsamic vinegar
- Preheat oven to 425°F.
- Brush olive oil over pizza crust. Top with peach slices and cheeses.
- Bake in the preheated oven for 12 minutes.
- Meanwhile, in a small saucepan, bring balsamic vinegar to a boil. Simmer until it reduces to about 1 ½ TBS (about 5 minutes).
- Drizzle balsamic reduction over the pizza and cut into 6 slices. Serve.
