I love lasagna, but I don’t make it often because it takes so long to make. Well, these lasagna stuffed mushrooms have many positive qualities of lasagna, while taking much less time to make!

These zucchini feta rye berry cakes with roasted cherry tomatoes is by far my favorite way to make a zucchini “fritter”. It’s really more of a cake or patty because the rye berries add so much dense chewy texture.
The cakes are delicious on their own, but the cherry tomatoes and yogurt make this something special. The sweetness and slight acidity of the tomatoes balances the earthy, tangy notes of the rye berries while the yogurt adds a creamy luscious texture. Continue reading

Tandoori grilled tofu and vegetables is a recipe that I wanted to try for a long time before I finally did. I love anything grilled and the spice mix used in the sauce is gold, literally.
What is tandoori? It is a dish that originated in India that uses a yogurt based sauce and a tandoor oven, which is heated with wood or charcoal. I grilled mine to acheive the smokey flavor of a traditional tandoor dish. Continue reading

I adore miso dressing over spinach and have been playing with a few variations since I posted my ginger miso dressing recipe. This spinach salad with sweet chili miso dressing has become my new favorite.
The dressing can be made without a food processor, it is just very difficult to get the miso to incorporate smoothly when stirring with a whisk or spoon. A mini food processor is a small but mighty investment if you like to make your own salad dressings. Continue reading
