I have not had any problems with using frozen fruit. I have also placed the leather in the freezer for long term storage. Let us know what you think about the leather without cooking down the peaches!

I remove the skin for jam but not leather. I wash, chop, bag and freeze. I don’t have a blender so I plan on using my food processor. I think I’ll cook some as you do but I may also just puree some with a bit of lemon and put it on unbleached parchment paper. I hope the freezing won’t be an issue.

My oven does not have a dehydrate setting so I cannot say for sure. I think it would work assuming that the temperature is low enough, about 135 degrees F. If the temp is a little higher, you might try reducing the time.
