This month’s recipe redux theme was Movie Inspiration, because the Oscars are right around the corner! Therefore, I chose to make giant green veggie burgers after one of my favorite movie characters, the hulk!
This recipe is a great way to sneak in extra veggies. Broccoli is one of my favorite veggies, but not so much for my husband. After trying these burgers, he said he never would have guessed they had broccoli in them!
The peas in this recipe add sweetness to the burger that you might not expect. Therefore, I like the pair the burgers with some spicy mayo. The creaminess helps the burger to have the right mouth feel, and the spicy balances with the sweet.
I usually make my veggie burgers smaller than these because they hold their shape a little better that way. For hulk-inspired burgers, I decided big was the way to go, but you can make them either way.
Variations to the Giant Green Veggie Burgers recipe:
- Make them into an appetizer! Little slider burgers would be perfect for an Oscar viewing party!
- Substitute quinoa for the rice. It’s higher in protein, but has a softer texture.
- Load your burger with toppings! I used basic onion and lettuce, but you could go crazy with all the options. I like the idea of a spicy jalapeno and avocado topping as well!
- 2 cups chopped broccoli (florets and stems)
- 2 cups green peas, thawed
- 1 small onion, diced
- splash olive oil
- 2 tsp white wine vinegar
- 1 cup bread crumbs
- 1 cup cooked brown rice
- 3 garlic cloves, minced
- ¼ cup shredded mozzarella
- 1 TBS Dijon mustard
- ½ tsp each: smoked paprika, cumin, and steak seasoning
- ¼ tsp each: salt and black pepper
- 2 TBS whole wheat flour
- 1 large egg, beaten
- ½ cup mayo
- 1-2 TBS hot sauce
- 4 large whole wheat buns
- Lettuce and red onion for serving
- Steam broccoli in the microwave until it starts turning bright green, about 1 minute.
- Combine broccoli and peas in a food processor and pulse until well chopped, but not mushy (you will want some texture to the pieces).
- In a skillet, saute the onion is a splash of olive oil until softened and just staring to brown, 5-10 minutes. Remove from heat and stir in white wine vinegar.
- In a bowl combine pulsed green veggies, sauted onion, bread crumbs, rice, garlic, mozzarella, Dijon, smoked paprika, cumin, steak seasoning, salt, and pepper. Taste test and adjust seasoning as needed.
- Mix in four and egg and form the mixture into 4 large patties (you could also make 5 small patties). The mixture is soft so work carefully and gently place them in a large skillet. 2 large patties or 3 small patties fit well in a 10 inch skillet.
- Cook over medium heat in a preheated skillet for 5 minutes per side, or until golden brown and starting to firm. Patties will firm up a little more as they cool.
- Stir together mayo and hot sauce to make a spicy mayo (it complements the sweet peas very well).
- Serve on toasted buns with red onion, lettuce, and spicy mayo.
