Football season starts tomorrow!! I don’t know what I love more, watching the ball game, or planning the food and drink! We love to watch the games, crowded around the TV with a plate full of finger foods and snacks. This recipe for bean dip is so simple to throw together before the game and is always a hit!
This is a bean dip so we always start with a pile of homemade re-fried beans. Not all canned re-fried beans are vegetarian. Watch ingredients labels for lard to serve this dish to your vegetarian friends.
Next is the sour cream! I love how smooth it glides on over the beans.
Then, pile with cheese. I use a shredded Mexican cheese blend, but cheddar would work as well.
Pick your favorite salsa for this dish. We like a medium salsa, slightly chunky, but not thin because it will run.
Next, top with chopped romaine lettuce. I love the crunch and freshness that this adds to the dip.
Finally, fresh tomatoes finish the dip off with some color!
Feel free to add more of your favorite things. Try Guacamole to make a 7-layer dip (Add between sour cream and cheese). I think olives would be a great addition to the tomatoes. This dip is so versatile you could make it to suit any taste. Serve with homemade baked tortilla chips! Enjoy!
- 1 cup re-fried beans
- ½ cup sour cream
- ½ cup shredded Mexican cheese blend
- ½ cup salsa, use hot to make it spicy
- 1 cup chopped romaine lettuce
- ¼ cup diced fresh tomatoes
- Spread beans onto a plate. Top beans by spreading with sour cream. Sprinkling cheese over sour cream layer.
- Dollop salsa over cheese and spread carefully with a spoon. Top with chopped romaine and diced tomatoes.
- Serve with tortilla chips.
