Asparagus and Corn Salad

- 1 ½ cups asparagus, cut into 1 inch pieces
- 1 ½ cups corn (thawed from frozen)
- 2 TBS each: olive oil and white wine vinegar
- 1 garlic clove, minced
- ¼ tsp each: Dijon mustard (optional), salt and pepper
- 2 TBS minced red onion
- Steam asparagus until bright green on the stovetop or in the microwave. Mix it together with the corn.
- Mix together the olive oil, white wine vinegar, garlic, Dijon (if using) salt and pepper. Pour the dressing over the asparagus mixture.
- Garnish with the minced red onion.
