This summer, time has not been on my side. I always seem to have less than I need (or want) to get things done. I have been eating these easy hummus and pickled pepper wraps for lunches because I can literally make them in 2 minutes.
So, a little news for you all. I have taken a new job! I don’t talk much about my “real” work here because that’s not what this space is about. The prep for the upcoming semester has kept me from this space, and I apologize for that.
I am moving from working two part time jobs, into working one full time position, which I am soooooo excited about! The job is going to be great, and I’m looking forward to easier time management, with less jobs.
For any of you who are busy with back-to-school like me, these wraps are for you. Super simple ingredients, super easy to make, and super flavorful as well!
What I love about these wraps: The pickled pepper adds a punch of acidity that really makes these simple wraps sing. The hummus adds a complementary creamy and cooling element, and the whole thing is moist and not dry.
Variations to the Easy Hummus and Pickled Pepper Wraps recipe:
- Make homemade instead of store bought. Both the hummus and the pickled peppers could be made from scratch.
- I used both banana peppers and jalapenos. You can buy or pickle any kind of peppers that you like. The combo of sweet banana pepprs and jalapenos is sweet-n-spicy, and delicious!
- The lettuce is just a filler ingredient. You could use anything you have on hand like spinach, kale, arugula, spring mix, or chopped romaine. No need to measure either. A large handful is about what you want.
- If you have them, add some more chopped veggies. I have used fresh peppers and cucumbers as well. Both delicious.
- I like to serve this wrap with some fresh fruit and/or some potato chips depending on the day.
- 1 medium sized wrap
- ¼ cup hummus
- ½ cup (a large handful) lettuce, spinach, arugula, etc
- ¼ cup pickled sliced peppers (from a jar), drained*
- Spread hummus over ⅔rds of the wrap, spreading it out to the very edges.
- Top with lettuce, and pickled peppers.
- Fold wrap over filling and roll to close.
