Easy Guacamole

This recipe is my favorite.  I mean it, I am so excited to share this recipe.  Guacamole is something that should be easy to make.  And this recipe is delicious as well.  I made this recipe by testing time and time again, until I came up with the perfect combination.  I stock all the ingredients, except the avocado, in my pantry so I can whip it up at any time!

Easy Guacamole

In Mexico, all you need to make guacamole is salt and avocados.  In my kitchen, you need a bit more, but not a lot.  I use lime juice to add brightness and acidity, but also to keep the avocado from oxidizing too quickly.  Garlic adds depth of flavor.  Also, garlic keeps away vampires, so we should all love it.  Finally, cayenne adds the spice that I love!

Mixing Guacamole

When I was first testing guac recipes, I tried all kinds of fancy ones with chopped tomatoes and onions. They were too complicated for me.  I don’t mind chunky guac, but I want chunks of avocado, and tomatoes and onions just added too much texture.  Adjust seasonings to your taste, and this recipe will become your go-to for an easy guacamole! This easy guacamole is so simple you'll make it again and again. All you need is pantry ingredients!

Serves: 1 cup or 4 toppings
Ingredients
  • 1 avocado, peeled and seed discarded
  • ½ TBS lime juice
  • 1 large garlic clove, (or 2 small)
  • ⅛-1/4 tsp salt (depending on preference, I like less)
  • ⅛ tsp cayenne pepper
Instructions
  1. Cut or coarsely mash avocado into medium pieces. Pour lime juice over top and let sit while you mince the garlic (allowing absorption time in larger chunks reduces later oxidation).
  2. Mince garlic clove.
  3. Mash avocaod to desired texture using a fork or small masher.
  4. Mix garlic clove, salt and cayenne into avocado. Taste test and adjust seasoning.
