Last week, I made this creamy colorful broccoli slaw to use up some ingredients from the fridge. It was such a hit, we had it again the next night! This week, I made it again to share with all of my fantastic readers!
What do you do with loads of leftover vegetables in the fridge? Make a salad, am I right?! Well, this broccoli salad turned into a slaw when I decided to use a creamy dressing.
The dressing really ties this slaw together. It is super creamy while being bright and a little bit sweet. The apple cider vinegar is completely to blame for its fantastic flavors!
I usually use red wine vinegar to make dressings (like this broccoli orzo salad with olives), but this time I tried the apple cider vinegar and completely fell in love! Be sure to get apple cider vinegar with mother; it packs loads of flavor!
Variations to the Creamy Colorful Broccoli Slaw recipe:
- Any combination of cut vegetables that equals 5 cups will do for this slaw. You can vary the amount on the vegetables list, or try something else entirely. Once, I used kale and radicchio in place of the broccoli and cauliflower, for example.
- I have tried this slaw with yellow onion, sweet onion, and no onion. I like the sweet onion the best. Use what you have on hand, or what you prefer.
- I used a slicing attachment on a food processor to “shave” the broccoli florets. It makes a beautiful presentation not usually seen in a slaw. You could also make this into a chopped salad if you don’t have a food processor. If you try a chopped salad, you will likely need less dressing.
- Use a bag of pre-cut broccoli slaw if you’re in a hurry.
- ½ cup mayo
- ¼ cup unfiltered apple cider vinegar
- ½ tsp salt
- ¼ tsp pepper (optional)
- 2 cups each: shaved broccoli and cauliflower (stems and/or florets)
- ½ cup each shredded carrots and sliced red cabbage
- ½ cup minced sweet onion (such as Vidalia or Candy onions, optional)
- 4 garlic cloves, minced
- In a large bowl, combine mayo, apple cider vinegar, salt, and pepper until smooth.
- Shave broccoli and cauliflower using a slicing attachment in a food processor, or buy a bag of broccoli slaw.
- Add shaved broccoli, cauliflower, carrots, sliced red cabbage, sweet onion, and garlic to the large bowl with the sauce. Stir to combine.
