In honor of Cinco de Mayo, I have completed a list of vegetarian Mexican food for you all to check out! I love holidays that inspire me to cook, and I love to cook mexican food. I have tried to keep this list very authentic. There are many awesome tex-mex recipes out there, but in celebration of Cinco de Mayo, I wanted to focus on true Mexican food. To me, authentic Mexican food is simple, using quality ingredients. It lacks american influence and instead reflects what was available for mexican families to cook with. Simple ingredients such as tomatoes and peppers, that could be grown in a garden, and corn that was ground into flour to make tortillas. Enjoy!
