I have a serious problem with good deals at the grocery store. When I find a good deal, I can’t leave it there. Luckily, I don’t have the same problem with other things, like clothes or shoes, just food. Probably because I get so much more enjoyment out of food. Well, a few weeks ago I found a great deal on dried cherries. After much deliberation, I decided that cookies were the answer to my deal find. Cherry almond oatmeal cookies that is.
In my adult hood, I have found that I love fruit in my cookies. I think it’s the chewy texture. Or maybe the sweet spot you find as you chew, it’s like a little surprise. I developed this recipe from a family recipe I enjoyed as a child. The old recipe was just a chocolate chip oatmeal cookie. Now I enjoy it with cherries and almonds. Definitely an adult swap.
Variations to the Cherry Almond Oatmeal Cookies recipe:
- If you don’t have almond extract, you can use vanilla. I like the extra almond-y flavor it lends, but vanilla will be just fine.
- I keep rolled oats in my pantry today, but as a kid I always made this recipe with quick oats. Use whatever you have.
- Slivered, sliced, or chopped almonds will all work. The larger the piece you use, the crunchier it will stay.
- I think flax eggs work wonderfully in cookies, use whatever you like. ( To make a flax egg, combine 1 TBS flaxseed meal and 2 TBS warm water. Let it sit until it gets thick like egg whites.)
- To make this recipe vegan, try your favorite vegan butter, and use a flax egg.
- To make this recipe gluten free, try your favorite all-purpose gluten-free flour, and make sure your oats are certified gluten free.
- ¾ cup white whole wheat flour
- ½ tsp baking soda
- ½ cup butter (1 stick)
- ⅓ cup white sugar
- ⅓ cup brown sugar
- 1 egg (or 1 flax egg)
- ¼ tsp almond extract
- ½ cup dried cherries
- ⅓ cup slivered almonds
- 1½ cups rolled oats
- Preheat oven to 375 F.
- Whisk together flour and baking soda in a small bowl. Set aside.
- In a large bowl, beat butter with sugars until fluffy. Mix in the egg (or flax egg) and almond extract. Mix in the flour mixture.
- Add the cherries, almonds, and oats to the batter and stir until they are fully coated in batter.
- Drop tablespoon size balls onto a parchment lined baking sheet. Bake in the preheated oven for 10 minutes.
