Lentil Kale Fritters

Lentil Kale Fritters by Alison's AllspiceI came up with the idea for these lentil kale fritters when I was trying to find a new way to use up my copious garden kale.  Two packed cups of chopped kale is a lot of kale, but it cooks down so that it folds in with the lentils in a perfect 1:1 ratio.

These fritters don’t feel like you are eating tons of greens either thanks to the texture of the lentils.  The flavor it also bright and not too earthy thanks to the tomato paste, Dijon, parmesan and basil.  Continue reading

Tomato Braised Tofu with Cilantro Lime Rice

Tomato Braised Tofu with Cilantro Lime Rice by Alison's AllspiceBefore I was born, my parents had a neighbor from Mexico that taught my mom a few traditional recipes that we enjoyed all throughout my childhood.  This tomato braised tofu recipe with cilantro lime rice is adapted from one that we simply called “Mexican Pork” where the pork is braised in a tomato sauce that is infused with traditional spices and aromatics. Cherry Tomato Stewed Butter Beans over Toast

Cherry Tomato Stewed Butter Beans over Toast by Alison's AllspiceAt the end of the gardening season, I am always bringing in loads of cherry tomatoes.  These little gems are such a treat because they are the sweetest tomato around.  I love turning them into rustic sauces, like I do in this cherry tomato stewed butter beans over toast recipe.

Butter beans are also known as lima beans.  They’re renaming is apt because these beans really do have a moist and buttery center.  You could also make this recipe with white beans, but don’t be intimidated by the large butter bean.  In my opinion, they are better! Continue reading

Grilled Tofu and Summer Vegetable Tacos

Grilled Tofu and Summer Vegetable Tacos by Alison's AllspiceMexican food is hands down my favorite type of food, so it should not be a surprise that we eat tacos all the time.  Luckily, there are so many delicious taco fillings (like these grilled tofu and summer vegetable tacos) that tacos never get old.

Summer is the perfect time to be outside enjoying time around the grill. I hear a lot of vegetarians and vegans struggle to come up with ideas for meals to put on the grill.  Don’t worry I am hear to help! Continue reading

Grilled Portabella and Lentil Spaghetti by Alison's AllspiceThat time of the year where life starts to get crazy busy is here again.  It’s back to school time, and for me that means meal prep!  One of my favorite ways to meal prep is to grill some extra veggies to use in other meals, like this grilled portabella and lentil spaghetti recipe.

This salad is very easy to make.  It requires a little bit of time to chop all the vegetables, but it is totally worth it.  The flavor of all the vegetables go together perfectly, and the dressing is the icing on the cake! Continue reading

Roasted Cauliflower and Spinach Pasta

Roasted Cauliflower and Spinach Pasta by Alison's AllspiceFriends, it has been a busy summer, but I have not forgotten about you and your recipe needs!  This roasted cauliflower and spinach pasta recipe is a simple one that I whipped up out of leftover ingredients in the fridge but I loved it so much that I though you all needed to have it here.

I wrote this recipe as a single serving because that is how I made it.  It could easily be doubled or quadrupled to serve your whole family or to take to a cookout. Continue reading

Coconut Turmeric Noodle Bowl with Tofu and Veggies

Coconut Turmeric Noodle Bowls with Tofu and Veggies by Alison's AllspiceThis coconut turmeric noodle bowl with tofu and veggies was inspired by golden milk, a creamy drink or tea made with a base of plant-based milk and turmeric.  I used the golden milk in place of broth to make a creamy noodle bowl that can be eaten hot or cold.

This isn’t a soup recipe because the ingredients are prepared individually, not together in one pot.  It resembles a buddah bowl more than it does soup. Continue reading

Sesame Soba Noodles with Asparagus and Tofu

The ingredients are simple and there are many swaps that can be made with success, even for a novice cook like myself when I was young.  It is also full of flavor making it an easy favorite to have again and again, which I did! Continue reading
