Top Eight Recipes of 2021 by Alison's AllspiceFirst of all, I’d like to wish all my readers, friends, and family a Happy New Year!  It’s crazy to think that today is the very last day of 2021.  It went by in a flash, with all of its ups and downs.  Today I took a little time to do some reflecting on this past year.  In my corner of the internet, there were 8 recipes that stood out as the Top Eight Recipes of 2021!

Sweet Potato Black Bean Tostadas by Alison's AllspiceI had 2 sweet potato plants in my garden this summer and I finally harvested them yesterday. It’s sad to see the garden finally be done for the season, but it is exciting to have a great sweet potato harvest this year to use in my sweet potato black bean tostadas!

Lentil Kale Fritters

Lentil Kale Fritters by Alison's AllspiceI came up with the idea for these lentil kale fritters when I was trying to find a new way to use up my copious garden kale.  Two packed cups of chopped kale is a lot of kale, but it cooks down so that it folds in with the lentils in a perfect 1:1 ratio.

These fritters don’t feel like you are eating tons of greens either thanks to the texture of the lentils.  The flavor it also bright and not too earthy thanks to the tomato paste, Dijon, parmesan and basil.  Continue reading

Cherry Tomato Stewed Butter Beans over Toast by Alison's AllspiceAt the end of the gardening season, I am always bringing in loads of cherry tomatoes.  These little gems are such a treat because they are the sweetest tomato around.  I love turning them into rustic sauces, like I do in this cherry tomato stewed butter beans over toast recipe.

Butter beans are also known as lima beans.  They’re renaming is apt because these beans really do have a moist and buttery center.  You could also make this recipe with white beans, but don’t be intimidated by the large butter bean.  In my opinion, they are better! Continue reading

Grilled Portabella and Lentil Spaghetti by Alison's AllspiceThat time of the year where life starts to get crazy busy is here again.  It’s back to school time, and for me that means meal prep!  One of my favorite ways to meal prep is to grill some extra veggies to use in other meals, like this grilled portabella and lentil spaghetti recipe.

Do you practice meal prep?  I highly recommend it as it is a time saver in the long run.  I like to meal prep all sorts of things, like grilling vegetables for this recipe, or cooking a big batch of grains or making work lunches for the week. Continue reading
