Portabella and Lentil Pot Pie

Three Bean Chili

Cracker Crust Pizza

Cracker Crust Pizza by Alison's AllspiceHello Friends!  This is another recipe fantastic for football season!  Some thin crust pizzas lack in crust texture. You get a slice and it flops in your hand.  The flavor is all there, but that’s just because you have a delivery service for ooey-gooey cheese.  This pizza crust is thin and crispy, the best of both worlds!

This is my second post using yeast to make a pizza crust.  I promise, it’s worth the trouble.  You can let the dough rise, or not.  It’s the baking method that matters.  See the photos below of the dough and crust.  The crust is laced with herbs, which add a fresh flavor.  On the first bake, the dough will puff up into a pocket; this separation of the layers allows for extra crisping which make the crust special. I love to make enchiladas because they are simple.  Simple ingredients and simple to prep.  All you have to do is make your filling, stuff tortillas, and bake!   Anyone can do that.  This recipe is made almost entirely out of my pantry staples.  It’s easy to add to the end of my weeks meal planning because I generally don’t need many ingredients.

Vegan Chilaquiles

I am so excited to share this recipe.  Chilaquiles (Chee-la-key-les) is a traditional Mexican dish that is made to use up stale tortillas or tortilla chips.  I dislike food waste, therefore I love recipes like this one.  Recipes that lend ideas to use up ingredients that you have leftover in your fridge.  This recipe is so quick, I almost didn’t get any photos while I was cooking.  A great recipe for a busy weeknight!

Arugula Pesto Pasta

Pesto and pasta were made for each other.   Any kind of pesto, and any kind of pasta.  Tah Dah!  You have a delicious meal.  However, If you have never had arugula pesto, you have to give this a try.  Arugula is from the mustard family and is known for its peppery flavor.  When concentrated into a pesto, it’s a flavor explosion!
