Red Curry Chickpea Salad

Red Curry Chickpea Salad by Alison's Allspice I have been in love with my homemade curry powder long enough that I have forgotten how flavorful curry paste really is.  All the work of building base flavor is done for you so that you can make simple yet delicious meals like this red curry chickpea salad with ease.

I have not tried it, but I’m certain you could still use curry powder to season a delicious chickpea salad.  However, I’m hooked on this version with the paste because of the depth of flavor that it brings so easily. Continue reading

Asparagus and Pesto Baked Eggs

Asparagus and Pesto Baked Eggs by Alison's AllspiceI have another asparagus recipe for you this week!  This time, I made a quick and easy lunch, asparagus and pesto baked eggs.  I used sundried tomato pesto, and it was stunning in this dish!

First, many asparagus baked eggs do not use pesto.  I used it because I wanted an extra pop of flavor.  If you don’t have any, this dish will still be tasty, just not as complex. Continue reading

Thai Sweet Potato Soup

Thai Sweet Potato Soup by Alison's AllspiceI had a huge sweet potato crop in the garden this fall and I have been loving cooking with sweet potatoes all winter long. Soup season is just about over for me, so you should try this Thai sweet potato soup before spring weather sweeps us off our feet!

I almost always pair sweet potato with a spicy flavor.  Sweet and spicy are a perfect match and there are lots of ways to do it with sweet potatoes.  Usually I go with chipotle to add heat, but the red curry paste in this soup did a wonderful job as well. Continue reading

Gouda and Smoked Tofu Grilled Cheese

Gouda and Smoked Tofu Grilled Cheese by Alison's AllspiceThis post is really more like an idea than a recipe.  Yes, the recipe for gouda and smoked tofu grilled cheese is written out in full below.  However if you know how to make a grilled cheese sandwich, then all you need to do is add some smoked tofu to have a hearty, cozy, and easy to make meal in only a few minutes.

The grilled cheese was one of the first things that I learned to cook.  I was just a kid probably getting in the way in the kitchen.  I imagine I was told to flip the sandwich while another was being made. Continue reading

Roasted Poblano and Quinoa Vegetable Soup

Roasted Poblano and Quinoa Vegetable Soup by Alison's AllspiceDuring winter when I’m craving a big warm cozy bowl of soup, I always make a big batch of vegetable soup.  This year I switched it up from my best-ever vegetable soup and made this roasted poblano and quinoa vegetable soup.

The backbone of the two soups is the same, plenty of aromatics, flavorful broth, a sprinkle of seasonings and a balance of different flavored vegetables.  I love the heat of the poblanos balanced with the sweetness of corn and bell pepper in this version. Continue reading

Garlic and Nutritional Yeast Pangrattato Pasta

Garlic and Nutritional Yeast Pangrattato Pasta by Alison's AllspiceBefore I knew what Pangrattato was, I used to call it spaghetti with breadcrumbs. Pangrattato is Italian for breadcrumbs.  Most often when I see this title used, it is used as a topping on pasta.  Garlic and nutritional yeast pangrattato pasta is just one in a million ways to make pangrattato.

All you have to do to make pangrattato is to heat oil in a skillet, add breadcrumbs and seasonings and cook until toasted to crunchy perfection.  Use it to top all your favorite pasta dishes, or just put in on plain spaghetti with an extra drizzle of olive oil.  You can use it on casseroles, and many other dishes as well. Creamy Roasted Garlic and Parmesan White Bean Soup

Creamy Roasted Garlic and Parmesan White Bean Soup by Alison's AllspiceAre you a smooth blended soup person, or a leave it chunky soup person?  For myself, I’m still deciding because this creamy roasted garlic and parmesan white bean soup is delicious both ways.

If I’m being honest, I usually serve this soup only half blended to get the best of both worlds.  The blended white beans become ultra creamy but a few chunks of veggies here and there make give it some texture. Continue reading

Smoky Pumpkin Pasta

Smoky Pumpkin Pasta by Alison's AllspiceI love pasta, and therefore, it is hard to believe that I have not tried this smoky pumpkin pasta before now.  The creamy sauce clings to the pasta in a way that is reminiscent of mac and cheese, but the flavors are more sophisticated.

The pumpkin really elevates the other savory flavors in the dish without getting lost itself.  Its creamy earthy tones are balanced by the smokiness of the paprika, which also brings the smallest touch of heat. Continue reading

Chickpea Harissa Bread Soup

Chickpea Harissa Bread Soup by Alison's AllspiceThis chickpea harissa bread soup is a variation of lablabi, a Tunisian chickpea stew.  The traditional stew has a thin broth with chickpeas served over toasted bread. This version is also served over toasted bread, but the broth is thick and creamy.

The Italians also have a version of bread soup, usually made with stale bread and tomatoes.  Italian bread soup has you add the bread to the pot at the end of cooking.  I prefer this version of bread soup where the bread is toasted and added to the bowls. It maintains more texture, kind-of like a crouton. Continue reading
