Teriyaki Mushroom Tacos

Teriyaki Mushroom Tacos by Alison's AllspiceWhen I want to create a new recipe, and I want it to be a hit for my family, tacos are the way to go. These teriyaki mushroom tacos are super flavorful, made with a homemade teriyaki sauce and sriracha mayo!

My husband thinks that tacos are a food group.  I can’t disagree, tacos are pretty much the most awesome way to devour some deliciousness. The tortilla should have an award for being the best food delivery service. Continue reading

Chunky Tomato Orzo Soup

Chunky Tomato Orzo Soup by Alison's AllspiceWarmer weather is finally starting to show it’s face after a long winter.  However, I’m willing to bet that we have one last cold snap headed our way before summertime, and I’m ready with this chunky tomato orzo soup!

I have been dreaming of summer tomatoes, refusing to buy fresh at the store (they are just not as good).  Luckily, canned tomatoes pack great flavor, perfect for soup! Continue reading

Mushroom Lentil Vegetarian Lasagna

Mushroom Lentil Vegetarian Lasagna by Alison's AllspiceMy husband rolls his eyes every time I say we’re having lasagna…  He says it’s a food all women love, and maybe he’s right.  But, what’s not to love?  Mushroom lentil vegetarian lasagna is what’s for dinner!

I usually think of vegetarian lasagna being layered with shredded and chopped veggies.  I have a favorite version that is loaded with carrots, zucchini, spinach, mushrooms, and onion.  You can find the small batch version of it here. Continue reading

Giant Green Veggie Burgers

Giant Green Veggie Burgers by Alison's AllspiceThis month’s recipe redux theme was Movie Inspiration, because the Oscars are right around the corner!  Therefore, I chose to make giant green veggie burgers after one of my favorite movie characters, the hulk!

This recipe is a great way to sneak in extra veggies.  Broccoli is one of my favorite veggies, but not so much for my husband.  After trying these burgers, he said he never would have guessed they had broccoli in them! Continue reading

Creamy Chickpea Lentil Soup with Kale

Creamy Chickpea Lentil Soup with Kale by Alison's AllspiceRecently, I have been lamenting spring.  However, spring goes as quickly as it comes, so I’m trying to live in the moment and enjoy the cool weather before summer’s heat sets in.  This creamy chickpea lentil soup is the perfect way to enjoy the last of winter’s cool weather.

Do you ever find yourself wishing you were somewhere else?  Enjoying the moment is an important life skill, and I find sometimes it takes practice.  I totally connect to life through food, so I stay in the moment by making seasonal dishes. Continue reading

Arugula Wild Rice Salad with Red Wine Vinaigrette

Arugula Wild Rice Salad by Alison's AllspiceI love to grow arugula in my garden, but the homegrown arugula is much stronger in flavor than the baby arugula you get from the store.  I started making this arugula wild rice salad to tame those strong garden fresh flavors!

The wild rice helps to subdue the peppery arugula by bulking up the salad with a mild earthy flavor (which pairs quite nicely).  I also add cranberries for sweetness, pecans for crunch and protein, and feta for a salty bite. Continue reading

Smoked Tofu and Sprouts Sandwich

Smoked Tofu and Sprouts Sandwich by Alison's AllspiceOne of my favorite food items during winter is sprouts!  They are easy to grow on your own when there isn’t much available for fresh, local produce.  I recommend using sprouts in sandwiches and wraps, like this smoked tofu and sprouts sandwich!

Someday soon I will be putting together a post on how to grow your own sprouts at home.  It is so easy, anyone can do it. It does take 5-7 days before you can harvest, but the wait is totally worth it! Continue reading

Creamy Carrot Ginger Soup

Creamy Carrot Ginger Soup by Alison's AllspiceThis week, the temperatures here have been in the single digits (not as cold as many places, but still cold for us!).   When it’s cold outside, a nice warm bowl of soup is in order.  This creamy carrot ginger soup is what’s for dinner!

This soup is more filling than a traditional bowl of carrot soup.  It has a hidden ingredient that adds protein, and an extra layer of creaminess! Continue reading

Five Spice Chickpea Clementine Buddha Bowl

Five Spice Chickpea Clementine Buddah Bowl by Alison's AllspiceChinese five spice powder is a delicious blend of warm spices, including  things like cinnamon, cloves, and nutmeg!  I love pairing these warming flavors with bright citrus in this five spice chickpea clementine buddha bowl!

Before we move on, lets talk about the buddah bowl.  It has become a popular name for vegetarian or vegan dish served in a single bowl.  Usually you see a combination of whole grains, plant based proteins, veggies, and sometimes fruit! Continue reading

Korean BBQ Veggie Burgers with Kimchi Slaw

Korean BBQ Veggie Burger with Kimchi Slaw by Alison's AllspiceHave you heard of the Korean BBQ sauce, gochujang?  I recently tried in on my Bi Bim Bop Spaghetti Squash Bowls and loved the sweet and spicy tangy sauce.  This recipe for Korean BBQ veggie burgers uses a homemade gochujang sauce!

Do you ever feel like your fridge is just loaded with condiments?  Maybe something you needed for a single recipe that you have never used again?  I hate throwing out half used jars of this and that because they are long expired in the back of the fridge. Continue reading
