Gyro Tofu Sliders with Tzatziki Slaw

Gyro Tofu Sliders with Tzatziki Slaw by Alison's AllspiceI have done it again.  All things gyro!  This time, I made gyro tofu sliders with tzatziki slaw.  The tofu was pan fried so it was nice and crispy on the outside, just the way I like it!

The first time I tried this recipe, I was using up leftovers from the fridge.  I had just made my favorite gyro recipe, these tempeh gyro tacos, and I was inspired to try the marinade with some leftover tofu. Continue reading

Easy Hummus and Pickled Pepper Wraps

Easy Hummus and Pickled Pepper Wraps by Alison's AllspiceThis summer, time has not been on my side.  I always seem to have less than I need (or want) to get things done.  I have been eating these easy hummus and pickled pepper wraps for lunches because I can literally make them in 2 minutes.

So, a little news for you all.  I have taken a new job! I don’t talk much about my “real” work here because that’s not what this space is about.  The prep for the upcoming semester has kept me from this space, and I apologize for that. Continue reading

Jerk Tofu with Green Curry Forbidden Rice

Jerk Tofu with Green Curry Forbidden Rice by Alison's AllspiceI get a lot on recipe inspiration from magazines.  Surprisingly (or not if you know me well), I like to recreate the meat dishes instead of trying the meatless recipes.  I turned a jerk chicken recipe into a jerk tofu with green curry forbidden rice recipe.

Usually, I think of green curry paste as a thai staple.  However, it goes well with jerk seasoning, as they have some similar flavors. Continue reading

Pineapple Sriracha Tempeh Tacos

Pineapple Sriracha Tempeh Tacos by Alison's AllspiceOne of my favorite tempeh recipes is my gyro tempeh tacos.  I used it as inspiration when I made these pineapple sriracha tempeh tacos.  They are fast, fresh, and perfect for summer!

The pineapple sriracha combo has a great sweet and spicy complex.  I flavored the tempeh very modestly, just so that it wouldn’t be bland, and added some crunchy cabbage as filler. Continue reading

Spicy Vegetarian Chipotle Quinoa Sliders

Spicy Vegetarian Chipotle Quinoa Sliders by Alison's AllspiceHow many times have you adapted a favorite recipe to make it meatless?  For vegetarians, this is a common practice. I adapted these spicy vegetarian chipotle quinoa sliders from my chipolte fish sliders recipe.

I identify as a pescatarian.  In other words, a vegetarian who still eats fish.  I post 90% vegetarian recipes, therefore, I attract more meatless-eaters with my recipes than fish-eaters. Continue reading

Cucumber Dill Quinoa Salad with Chickpeas

Cucumber Dill Quinoa Salad with Chickpeas by Alison's AllspiceThis fresh-from-the-garden cucumber dill quinoa salad with chickpeas is light and refreshing, but also filling.  The chickpeas and quinoa and loaded with protein to help sustain you all day long.

I love a simple red wine vinaigrette on most of my salads.  They are so easy to make and add huge amounts of flavor. Quinoa will soak up the dressing, so if you are making a large batch and plan to have leftovers (say, work lunches), store the dressing separately. Continue reading

Vegetarian Quinoa Pizza Burgers

Vegetarian Quinoa Pizza Burgers by Alison's AllspiceFor me, veggie burgers don’t necessarily need to taste like a burger.  Instead, they can be a delivery system for fun flavors. Like these Jamacian Jerk Plantain Burgers, or these Moroccan Carrot Veggie Burgers, or today’s recipe for vegetarian quinoa pizza burgers.

I think one of the best ways to get great flavor in something like a veggie burger is to load it up with different seasonings.  Make it complicated for your taste buds to figure everything out, and you will likely enjoy the flavors more. Continue reading

Arugula Pesto Lasagna Roll Ups

Arugula Pesto Lasagna Roll Ups by Alison's AllspiceHands in the air if you love lasagna!  Me too.  But do you ever have leftover sheets of lasagna noodles?  My box always seems to have just a few more than I really need for a recipe.  I created this arugula pesto lasagna roll ups recipes to use up those extra noodles!

I made this recipe with 5 lasagna noodles, because that’s how many I had to use.  It just so happens that I could not have fit more into a 9×9 inch pan as well.  Feel free to increase the recipe and make more roll ups, just plan on using a bigger pan. Continue reading

Mole Black Bean Tostadas with Slaw

Mole Black Bean Tostadas with Slaw by Alison's AllspiceA few months ago, I developed an easy homemade mole sauce recipe.  Most of the time I think of meat based dishes when I think of mole sauce.  Therefore, I have been playing with the sauce finding good vegetarian uses, like these mole black bean tostadas with slaw!

If you missed it, the first mole sauce recipe I posted was the mole jackfruit street tacos.  This recipe is moist and delicious, but I thought it was lacking protein. Therefore, I started working with mole and black beans. Continue reading

Kimchi Fried Rice with Peas and Cabbage

Kimchi Fried Rice with Peas and Cabbage by Alison's AllspiceAfter the photo shoot for this kimchi fried rice with peas and cabbage was finished, I started nomming like normal.  Then, I realized I forgot to photograph piercing the egg (a classic sunny side up egg shot).  I looked down at my bowl, and thought, 3/4 gone is actually a pretty good shot to see what it really looks like.

Did I go back to the studio and capture it?  No. It was too good to stop eating!  It was everything I could do to savory every bite instead of inhaling it in two seconds. Continue reading
