Lemon Caper Spaghetti with Chickpeas

On most Saturdays, I find myself at home alone for lunch. I usually try to go through the fridge and use up leftover ingredients. Sometimes I do something I might never have tried otherwise, and end up loving it! That was the case for this lemon caper spaghetti with chickpeas recipe.

This meal used up leftovers from my shrimp pistachio gremolata pasta dish. I wanted to make a vegan and nut free version, but the dish was lacking protein. Hence, chickpeas. I gave them a quick pan fry like I do in this gyro bowl recipe, and viola! Lunch is served. Continue reading →

Recently, I have been lamenting spring. However, spring goes as quickly as it comes, so I’m trying to live in the moment and enjoy the cool weather before summer’s heat sets in. This creamy chickpea lentil soup is the perfect way to enjoy the last of winter’s cool weather.

Smoked Tofu and Sprouts Sandwich

One of my favorite food items during winter is sprouts! They are easy to grow on your own when there isn’t much available for fresh, local produce. I recommend using sprouts in sandwiches and wraps, like this smoked tofu and sprouts sandwich!

Someday soon I will be putting together a post on how to grow your own sprouts at home. It is so easy, anyone can do it. It does take 5-7 days before you can harvest, but the wait is totally worth it! Continue reading →

Creamy Carrot Ginger Soup

Spiced Turmeric Tofu with Coconut Cilantro Rice

When I was prepping this recipe for the blog, I couldn’t decide if it should be two recipes or one. In the end, I made it a single recipe for spiced turmeric tofu with coconut cilantro rice. The rice and tofu could be served separately, but they are awesome together!

I’m a huge fan of tofu, while most people are not. I don’t know why, but I have just always loved it. Even before going meatless I would seek out restaurants that had great tofu. Continue reading →
