Grilled Eggplant and Herb Wrap

Grilled Eggplant and Herb Wrap by Alison's AllspiceHas everyone had a great summer full of grilling? I grill out every Sunday night.  This week, I made a grilled eggplant and herb wrap that is loaded with fresh flavor!

Are you a fan of eggplant?  It can be bitter, and salting the eggplant helps to remove those bitter flavors.  Also, the fresher the eggplant, the less bitter.

Some people are sensitive to eggplants bitterness, and others not.  Therefore, this may be a step you can skip if you don’t notice the bitter flavor of eggplant. Continue reading

Korean BBQ Tempeh Wraps

Korean BBQ Tempeh Wraps by Alison's AllspiceHave you tried Korean BBQ, or gochujang sauce yet? In these Korean BBQ tempeh wraps, the spicy gochujang is balanced by cool cucumber and creamy mayo.

Gochujang sauce is spicy, which is one reason I love it.  If you (or a member of your family) don’t like spicy, try using regular BBQ sauce in the skillet and personalize each wrap with spicy Korean or sweet American BBQ sauce. Continue reading

Easy Hummus and Pickled Pepper Wraps

Easy Hummus and Pickled Pepper Wraps by Alison's AllspiceThis summer, time has not been on my side.  I always seem to have less than I need (or want) to get things done.  I have been eating these easy hummus and pickled pepper wraps for lunches because I can literally make them in 2 minutes.

So, a little news for you all.  I have taken a new job! I don’t talk much about my “real” work here because that’s not what this space is about.  The prep for the upcoming semester has kept me from this space, and I apologize for that. Continue reading

Jerk Tofu with Green Curry Forbidden Rice

Jerk Tofu with Green Curry Forbidden Rice by Alison's AllspiceI get a lot on recipe inspiration from magazines.  Surprisingly (or not if you know me well), I like to recreate the meat dishes instead of trying the meatless recipes.  I turned a jerk chicken recipe into a jerk tofu with green curry forbidden rice recipe.

Usually, I think of green curry paste as a thai staple.  However, it goes well with jerk seasoning, as they have some similar flavors. Continue reading

Pineapple Sriracha Tempeh Tacos

Pineapple Sriracha Tempeh Tacos by Alison's AllspiceOne of my favorite tempeh recipes is my gyro tempeh tacos.  I used it as inspiration when I made these pineapple sriracha tempeh tacos.  They are fast, fresh, and perfect for summer!

The pineapple sriracha combo has a great sweet and spicy complex.  I flavored the tempeh very modestly, just so that it wouldn’t be bland, and added some crunchy cabbage as filler. Continue reading

Cucumber Dill Quinoa Salad with Chickpeas

Cucumber Dill Quinoa Salad with Chickpeas by Alison's AllspiceThis fresh-from-the-garden cucumber dill quinoa salad with chickpeas is light and refreshing, but also filling.  The chickpeas and quinoa and loaded with protein to help sustain you all day long.

I love a simple red wine vinaigrette on most of my salads.  They are so easy to make and add huge amounts of flavor. Quinoa will soak up the dressing, so if you are making a large batch and plan to have leftovers (say, work lunches), store the dressing separately. Continue reading

Cilantro Avocado Pesto Pasta

Cilantro Avocado Pesto Pasta by Alison's AllspiceCalling all avocado fans!!  If you’re like me, you buy avocados in the bag to the get the best deal.  This also means, that you have a lot of avocado to use.  This cilantro avocado pesto pasta recipe is so good, I ate it everyday last week to use up my bag of buttery avocado fruits!

In addition to avocados, I have totally fallen in love with chickpea pasta.  You could use any pasta in this recipe, but using chickpea pasta gives you a boost of protein, as well as fiber.  Two essentials that you need in your diet, that usually wouldn’t be high in a basic pasta dish. Pineapple Jalapeno Teriyaki Veggie Burger

Pineapple Jalapeno Teriyaki Veggie Burger by Alison's AllspiceFriends, I seem to have a thing for crazy veggie burgers!  I was inspired by a local restaurant to make this pineapple jalapeno teriyaki veggie burger, and it is a treat!

I recently learned something new.  Nutritional yeast is high in protein!  I have always used it to add flavor to veggie burgers and other vegetarian dishes, but never realized that it was adding 8 grams of protein per tablespoon as well. Continue reading

Easy Homemade Mole Sauce
