Fried Portabella PoBoy Sandwiches

Fried Portabella PoBoy Sandwiches by Alison's Allspice I have a secret to share.  I was obsessed with these fried portabella poboy sandwiches so much that I got sick of eating them.  They were so good that I just made them over and over and over again.

That was in spring, and now that all the summer produce is starting to wane, some fried comfort food sounds pretty good again. Continue reading

Creamy Smoked Tofu and Olive Pasta Salad

Creamy Smoked Tofu and Olive Pasta Salad by Alison's AllspiceI am not the only one in my family that likes to cook.  Many, many moons ago, I shared a lemon caper dressing recipe with my family that was a hit.  Not long after, this creamy smoked tofu and olive pasta salad recipe, using my dressing, was shared with me.

I don’t believe I would have ever google searched for a pasta salad like this one; the mix of ingredients seams random, but I promise you it is not.  The combination of flavors is specific and on point. Continue reading

Kale Hemp Seed Pesto

Kale Hemp Seed Pesto by Alison's AllspiceHave you ever tried to turn kale into a pesto?  It is a delicous way to enjoy kale, and I didn’t always like it.  The secret?  Hemp seeds.  They are not only healthy, but delicious in this kale hemp seed pesto.

Why hemp seeds?  Yes, they are loaded with omega-3 fatty acids which come along with many health benefits, but the true reason I use them is for their creamy flavor profile. Continue reading

Smoked Tofu Summer Rolls

Smoked Tofu Summer Rolls by Alison's AllspiceI can’t believe how fast the summer has gone, school starts in only a few weeks! I had to share these smoked tofu summer rolls before summer is over.  They are a fresh, light meal that can be easily made without heating up your kitchen!

I like to use the smoked tofu in my summer rolls because it is already cooked.  You could probably use “raw” tofu straight out of the package, but the smoked tofu has better texture and it adds more flavor. Continue reading

Simply Marinated Tempeh for Salads Sandwiches and Wraps

Simply Marinated Tempeh for Salads Sandwiches and Wraps by Alison's AllspiceThis simply marinated tempeh can be used in all sorts of ways.  I like to use it for salads, sandwiches and wraps.  The marinade is made from fridge and pantry staples so it is easy to whip up when you are planning on the fly.

Cubes are best for salads, but slices are best for sandwiches.  For wraps, you could go either way, but I prefer the slices. Continue reading

Teriyaki Tempeh Tacos with Radish Carrot Slaw

Teriyaki Tempeh Tacos with Radish Carrot Slaw by Alison's AllspiceRadish season has come and gone in my spring garden.  While I had fresh radishes, I made these teriyaki tempeh tacos with radish carrot slaw so many times.  Find some radishes to try them out for yourself!

Radish is one of those ingredients that I never quite know what to do with.  Sure you can slice them and add them to salads, but there are only so many of those salads I can eat before they get boring. Continue reading

Lentil Quinoa Stuffed Pepper Stew

Lentil Quinoa Stuffed Pepper Stew by Alison's AllspiceOne of my favorite recipes to make for work lunches is my Italian lentil quinoa stuffed peppers.  It is a rather time consuming recipe to make.  You have to boil the quinoa, the lentils, assemble the peppers and bake for 50 minutes.  Quin Continue reading

Roasted Red Cabbage with Garlic Vinaigrette

Roasted Red Cabbage with Garlic Vinaigrette by Alison's AllspiceI first started roasting cabbage a long time ago and for some reason I got away from it.  This spring, I have been trying many variations of this recipe and this roasted red cabbage with garlic vinaigrette is by far my favorite.

This recipe can be made with red cabbage, green cabbage, or both.  The red cabbage has better flavor, in my opinion, and its dark color helps to keep the cabbage from looking burnt when it is nicely caramilzed and crispy. Continue reading
